Southwest Breakfast Bake (by Becky) 2 - 7 oz cans green chilis 6 corn tortillas, cut in strips 16 oz spicy breakfast sausage, cooked & drained 1 lb shredded monterey jack cheese (if you use cheddar, use 1/2 lb) 8 eggs, beaten 1/2 c milk 1/2 tsp salt, pepper, cumin, garlic salt, and onion salt
In greased 9 x 13 glass pan, spread 1 can of chilis, 1/2 of the tortilla strips, 1/2 of the sausage, and 1/2 of the cheese. Repeat. Beat eggs with milk and spices and pour over layered ingredients. Refrigerate overnight.
Bake at 350 for 45-50 minutes. Let sit 10 minutes before serving. We serve it with salsa and sour cream.

Cinnamon Buns like Cinnabon's® Heavenly cinnamon rolls drizzled in a sweet icing. (by Better than I deserve) Serves: 12 - 15
1 1/2 cups granulated sugar 3 Tbls. ground cinnamon (2) .25 oz. pkts. active dry yeast 1 tsp. granulated sugar 1 cup 110 degree water 1 cup warm milk 2/3 cups granulated sugar 2/3 cup melted butter OR margarine 2 tsp. salt 2 eggs - slightly beaten up to 8 cups all-purpose flour 1/2 cup melted butter OR margarine 1 1/2 cups chopped walnuts OR pecans - optional 1/2 cup melted butter OR margarine 1/3 cup granulated sugar 4 cups powdered sugar 2/3 cup melted butter OR margarine 2 tsp. vanilla extract (maple extract too if you want) 2 oz cream cheese up to 6 Tbls. hot water
-Mix together 1 1/2 cups sugar and the cinnamon; set aside. -In a small bowl, dissolve yeast and 1 tsp. sugar in warm water; set aside. -In a large bowl, mix together milk, 2/3 cup sugar, 2/3 cup melted butter, salt, and eggs; add yeast mixture and 4 cups of flour to mixture; beat until smooth; stir in enough flour to form a slightly stiff dough. -Turn dough out onto a well-floured surface and knead for 8 minutes. -Place dough into a large greased bowl, cover, and allow to rise in a warm place until doubled in size, about 1 - 1 1/2 hours. -Punch down dough and let rest for 5 minutes. -Roll dough out onto a floured surface into a 15" X 20" rectangle. -Brush 1/2 cup melted butter over dough; sprinkle cinnamon sugar evenly over dough; sprinkle nuts evenly over dough, if desired. -Tightly roll up dough and pinch edges together to seal; cut the roll into 12 - 15 slices using dental floss or thread. -Coat the bottom of a 13" X 9" X 2" baking pan with 1/2 cup melted butter; sprinkle 1/3 cup sugar evenly in the bottom of the pan. -Place cinnamon roll slices close together in the prepared pan; cover pan and allow to rise in a warm place for 45 minutes. -Bake rolls in a 350 degree oven for 25 - 30 minutes, or until golden brown. -Stir together powdered sugar, 2/3 cup melted butter, and extracts; stir in hot water, 1 Tbls. at a time, until the glaze reaches desired spreading consistency. -Spread prepared icing over slightly cooled rolls.

Grandma's hash browns (by Januinely~me) 8 large russet potatoes,(I use red ) peeled 4 tablespoons butter (I use olive oil) 1 tablespoon salt (I usually omit the salt & sprinkle with a bit if seasoning salt instead) 1 teaspoon ground black pepper (optional)
DIRECTIONS
In a large saucepan, cover potatoes with water. Bring water to a boil and cook until tender, about 20 minutes. Let cool in refrigerator overnight. The next morning, heat butter in a large skillet or frying pan. Shred potatoes and add to pan. Season with salt and pepper. Cook until golden brown on bottom, flip and brown on other side.
Side note:
*Boil potatoes whole, do not slice or dice them.
*I use my cheese grater to shred them -- this works really well.

Sweet Potato Hashbrowns (by Januinely~me) 1 lb sweet potatoes, peeled & cubed 1/2 cup green pepper, chopped 3/4 cup cooking onion, chopped 1 1/2 tsp garlic, minced 1 1/2 tsp olive oil 1/4 tsp paprika -salt & pepper to taste-
In a large bowl; combine sweet potatoes, green pepper, onion, garlic, olive oil and paprika. Toss to combine. Transfer to large baking sheet and arrange in a single layer. Bake in preheated 400 F (200 C) oven for 20 minutes. Turn and bake an additional 20 to 25 minutes or until potatoes are tender. Season with salt and pepper.

Apple Dumplings (by 1 Little Blessing)
2 granny smith apples 1 can of cresent rolls 1 stick of butter 1 cup of sugar 1 Tsp of cinnamon
Peel apples and cut into fourths. Roll each apple in cresent roll. Mix butter, sugar, and cinnamon. Pour mixture over cresent rolls. Cook in a glass dish. Bake on 350 degrees until golden brown. __________________ Christy Mother to Abigail and Isaac

Ingredients -2 cups quick oats (original recipe called for whole rolled, but the quick worked just fine) -3/4 cup packed brown sugar -1/2 cup whole wheat gram flour (again called for 1/2 cup wheat germ but all I had was gram flour and it worked great!) -3/4 teaspoon cinnamon (We just dumped a bunch in b/c we love cinnamon) -1 cup all purpose flour -2pkg of high fiber instant oatmeal cinnamon swirl (optional, just wanted some more bang for my buck you could also use the dried apple kind) -3/4 cup raisins or any dried fruit (we used crazins and raisins) -3/4 tsp salt -1/2 cup honey -2 egg whites (again it called for 1 whole egg but I wanted to make these low cholesterol) -1/2 cup oil (any will work, I used olive) -2 tsp vanilla
1. Preheat oven to 350. Grease 9x13 pan 2. Large bowl mix oats, sugar, wheat germ, cinnamon, flour, raisins, salt. Mix and make a well in center. Pour honey, egg whites, oil and vanilla, mix well Pat mixture into pan 3. Bake for 30-35 min untill bars turn golden at the edges. Cool 5 min, cut into bars while warm. Don't let bars cool completely before cutting b/c they will be too hard to cut You can wrap individually in suran wrap for quick snacks.
For granola use the same recipe. bake a few min more. break into chunks while still warm. Store in air tight container. __________________ Melissa

Cranberry Pecan muffins (by illinibaby1) These are super yummy!
Cranberry Pecan Muffins (makes ~24-28) - 2 cup white flour - 2/3 wheat flour - 2/3 cup sugar - 4 tsp baking powder - 1/2 tsp salt - 2 eggs - 3/4 cup milk - 3/4 cup OJ (or milk or other juice) - 1/2 cup oil - 1 1/2 quick oats - 1 cup chopped pecans - 1 cup dried cranberries (or raisins) - cinnamon (optional) - vanilla - 24-28 1/2 pecan pieces
Mix wet ingredients. Add dry ingredients. Add pecans and cranberries. Fill muffin cups 2/3 full. Top w/ 1/2 pecan piece. Bake 350*F for 20-25 min (or till lightly brown on top.) Enjoy! __________________ Melissa

Deluxe Potato Casserole (by Ten From Him)
1 can cream of chicken soup (10 oz / 284 ml) 250 ml sour cream 1 cup 50 ml onion, chopped 1/4 cup 50 m butter, melted 1/4 cup 5 ml salt 1 tsp 1 kg potatoes, peeled & chopped 2 lb 500 ml cheddar cheese, shredded 2 cup 500 ml stuffing mix 2 cup 40 ml butter, melted 3 tbsp
In a medium bowl; combine soup, sour cream, onion, 1/4 cup (50 ml) butter and salt.
In a lightly greased casserole dish; combine potatoes and cheese. Pour soup mixture over potatoes, mixing well. Sprinkle stuffing mix over potatoes; drizzle with 3 tablespoon (40 ml) butter.
Bake in preheated 350 F (180 C) oven for 1 hour or until potatoes are tender.

I just spray nonstick cooking spray in a pan, then shred potatoes, then crumble the cooked sausage over that, then pour over a dozen or so stirred up eggs. I don't usually add the cheese til a couple minutes before we eat it. __________________ Julie

I like making a sausage ring which is made like the Pampered Chefs taco ring.
I cook up the sausage in a pan - scramble eggs - then mix the eggs and sausage together. Then I arrange crescent triangles in a circle on a round baking pan or stoneware with bases overlapping and points out. I spoon the sausage/egg mixture on the triangle base and top with shredded chedder cheese. Fold points over the sausage mixture and tuck under.
Bake at 375 deg. for 15-20 min. __________________ ~Angie~

Take about four cups of bread cubes and place in a greased oblong pan. Brown some ground sausage and place over the bread. Scramble eight eggs with one cup of milk and a little dry mustard if you have it with salt and pepper. Pour over the sausage and bread. Sprinkle two cups of cheese over the top and bake at 350 for around an hour. __________________ Betty

Fluffy Pancakes (by Januinely~me) 3/4 cup milk 2 tablespoons white vinegar 1 cup all-purpose flour 2 tablespoons white sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 egg 2 tablespoons butter, melted
Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour". Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Overnight French Toast Casserole 2 Tblsp light corn syrup 1 stick margarine 1 cup brown sugar
Combine above. Cook to a boil. Pour syrup into a greased 9x13 inch pan.
10-12 slices bread, cut in half
place bread over syrup layer, overlapping as necessary
5 eggs 1 1/2 cups milk 1 tsp vanilla 1/4 tsp salt
Beat together eggs, milk, vanilla, and salt. Pour over bread. Cover and refrigerate overnight.
Bake, uncovered, for 45 minutes @ 350 degrees. Invert pieces to serve. __________________

Emily's Christmas Eve Shortcut Cinnamon Buns These are made the night before and popped in the oven Christmas morning when the kids are attacking their stockings (or if your dks are teens like mine while you are trying to drag them out of bed! )
20 unbaked frozen dinner rolls (I get mine at Kroger and use the store brand) 1 cup brown sugar 1/4 cup instant vanilla pudding mix (1/2 of a small package of pudding mix. . . oh, gee, you'll have to make these again to use the rest up!) 2 teaspoons ground cinnamon 1/3 cup butter, melted.
Lightly grease a 10-inch bundt cake pan. Place frozen rolls into the pan and sprinkle with brown sugar, the pudding mix, and cinnamon. Pour melted butter over the top.
Cover with a clean, damp cloth (yeah, the recipe really says, 'clean'. . . until i read that i was thinking i would use one i pulled from the bottom of the hamper! ) and leave overnight at room temperature to rise.
In the morning, preheat the oven to 350º. Remove the towel and bake rolls for 25 minutes, until golden brown. Turn rolls out onto a serving plate and dig in. (of course, don't let anyone see you turn them out onto the plate, for there's always a lot of tasty little crusties left in the pan. if no one is around, you can eat them all yourself! ) __________________ ~Emily

I just made some this afternoon... It's really yummy
3cups old fashioned oatmeal 1 cup sliced or slivered almonds 3/4 cup coconut 1/3 cup and 2 tablespoons maple syrup 1/4 cup oil (I use canola) 1/3 cup + 2 TBSP brown sugar Dried fruit or chocolate chips if desired but I would add them after cooking. I added raisins once and everyone said no more.
Bake at 250 and stir every 15 to 18 min for 1 hour (depends on how you like it too...sometimes I cook longer for more crunch)
Not sure it's the healthiest version out there but it sure is good! We eat it on yogurt or as cereal...or just by the handful. __________________ Love, Susan
