French Toast Casserole by mammaof2boys2000
1 pound loaf Italian Bread 8 ounces cream cheese 1/2 c.sugar, divided 1/2 tsp. vanilla or almond extract 1/2 c. chopped pecans, optional 4 eggs 2 c. Milk 1 tsp. cinnamon 2 TBSP. butter, melted
Cut bread into cubes. Place half of bread cubes into greased 9x13 baking dish. Microwave the cream cheese until melted, stirring midway. Stir 1/4 c. of the sugar and the extract into the melted cream cheese. Pour this mixture over the bread cubes (will not completely cover the bread)Sprinkle nuts over the cream cheese layer. Top with remaining bread cubes.
In a bowl, beat the remaining sugar, eggs, milk, cinnamon and melted butter together. Pour over bread cubes.
Freeze at this point or let sit in refrigerator overnight.
Bake at 350ºF for 35 minutes. Serve with warm syrup or fruit toppings

Baked French Toast by Burpin Goose N Berry Inn Baked French Toast
Ingredients:
2 cups light brown sugar
1 stick butter or margarine
4 tablespoons flavoring of choice: vanilla, hazelnut, almond, etc.
4 eggs
1 3/4 cups milk
1 loaf Italian or French Bread cut into 1 inch thick slices
Cinnamon
Instructions: Preheat oven to 375. Place brown sugar into 13 x 8 inch baking dish. Melt butter or margarine in microwave. Blend brown sugar, melted butter and 2 tablespoons flavoring until its makes a glaze in bottom of baking dish. Whisk eggs, milk and remaining flavoring in a shallow bowl until well blended. Dip each bread slice into egg mixture, soaking both sides. Set bread on top of brown sugar mixture in baking dish. Sprinkle evenly with cinnamon to taste. (At this point you can refrigerate or freeze). Bake 20-25 minutes or until golden brown. Flip each slice of bread over so glazed side is up. Serve hot. Serves 6.
Comment by mom2riandkayl: oh, my family loves this recipe, but my version you just set the bread on the "topping" then pour the egg mix over the bread. Then you cover it and leave it in the fridge overnight. It makes a great brunch for the holidays. Yum!

Crockpot Breakfast Casserole by mammaof2boys2000
1 32-ounce bag of frozen southern style hashbrown potatoes (aka frozen shredded potatoes) 1 lb. of bacon cut into pieces, fried & drained 1/2 c. diced onions 1 green pepper diced 3/4 lb. cheddar cheese diced 1 dozen eggs 1 c. milk 1/2 tsp. dry mustard salt & pepper to taste
Layer the frozen potatoes, bacon, onions, green pepper and cheese in the crock pot in two or three layers. Finish up with cheese. Beat the eggs, milk, mustard, salt & pepper together. Pour over whole mixture, Cook on low for ten to twelve hours.

Sausage Casserole by Paula TN 1 lb. breakfast sausage 1 8 oz. cream cheese 2 packages of crescent rolls
Brown the sausage in a med. size pan. Add the cream cheese until smooth and well mixed. Spritz a 9 x 13 pan with oil. Spread one package of crescent rolls onto the bottom of pan. Add cream cheese & sausage mixture. Add last package of crescent rolls on top of casserole. Bake according to crescent roll package.
Very yummy and easy as pie. I usually get the casserole ready the night before and pop it in the oven in the morning.

Basic egg/sausage casserole by SandKsmama This is my favorite one b/c of the crescent roll crust! Also, you don't have to let it sit overnight, and it bakes in only 15 minutes, vs. an hour for some of the others. Good if you forget to plan ahead, like me!
1 1/2 pounds ground pork sausage (I just used 1 lb.) 1 (8 ounce) package refrigerated crescent roll dough 2 cups mozzarella cheese (I have used cheddar and also colby/jack in a pinch - they were all good!) 4 eggs, beaten (I used 6 eggs) 3/4 cup milk salt and pepper to taste
Directions 1 Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 425ºF (220 degrees C). 2 Lightly grease a 9x13 inch baking pan. Lay crescent rolls flat in the bottom of the pan. Combine cooked sausage, cheese, eggs, milk, salt and pepper; pour over crescent rolls. 3 Bake in preheated oven for 15 minutes, until bubbly and rolls are baked.

Farmer's Casserole by Toymom 3 C Frozen Hash Browns ¾ C shredded cheese-jack or cheddar 1 c fully cooked ham or Canadian bacon, diced ¼ c sliced green onion 4 beaten eggs 1 – 12oz. can of evaporated milk ¼ t pepper 1/8 t salt
Grease 2qt square baking dish. Arrange potatoes evenly in bottom of dish. Sprinkle with cheese, ham and green onion. In a bowl combine eggs, milk, pepper and salt. Pour over potato mixture. The dish may be covered and refrigerated several hours or overnight. Back uncovered at 350* for 40-45 minutes (50-60 minutes if made ahead and chilled) or until center is set. Let stand 5 minutes before serving.
Optional-Sprinkle in a small can of chopped Ortega chili peppers when doing the cheese,ham and onion layer.

Whole Wheat Pancakes (by Emily) 3 c. whole wheat flour 2 c. white flour 1/2 c. sugar 5 Tbsp. baking powder 1 1/2 tsp. salt 1/2 c. vegetable oil 3 eggs milk
Stir dry ingredients together. Add small amount of milk to stir out the lumps. Add eggs and oil; stir until smooth. Add milk until preferred consistency.
**I add frozen blueberries and I also make this up the night before and it tastes great! It makes a lot too. Works in the waffle maker too!

Pancake Recipe by tepupmommy Mix 1 Cup flour 1-1/2 tsp baking powder 1/2 tsp salt
Mix 1 egg 1 Cup milk 2 TBS veg. oil 1-2 TBS brown sugar
stir together until just blended
This is very simple to do and pretty good imo. Doesn't make a whole lot...might want to double

Versitile oat mix...Pancake recipe by tepupmommy This is a bulk recipe so you can make it and keep it in the cupboard and use as needed
Mix 3 cups flour 1 cup brown sugar 3-1/2 tsp baking powder 1 1/2 tsp salt
Cut in 1 1/2 cups shortening
Stir in 3 cups quick-cooking oats
keeps in airtight container for 6mo.
pancakes.....take about 2 cups of mix add a mix of 1 egg/1 cup water (you can make it thicker or thinner to your liking)
This recipe called for more sugar but I took it out and I still think it is SUPER sweet....I think more could be eliminated.

Buttermilk Pancakes (by Emily) 2 eggs 1 3/4 c. flour 1/3 tsp. salt 1 tsp. baking soda 2 1/4 tsp. baking powder 5 T. oil 1 1/2 c. buttermilk 1/4 c. milk
These are the yummiest pancakes I've ever had!! My friend made them for me last weekend ~ hope you like 'em!

Burpin's Ultra Healthy Waffles! Burpin's Ultra Healthy Waffles
1 cup old fashioned oats 1 cup all-purpose flour unbleached 1 cup whole wheat flour 4 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon kosher salt 2 cups soy milk 2 tablespoons Splenda 1/4 cup canola oil 1 teaspoon vanilla 3 eggs
In a food processer with the chopping blade grind up the oats until a fine powder. Add the remaining dry ingredients and pulse until blended.
Preheat waffle iron.
In a very large bowl combine soy milk, Splenda, oil, vanilla and eggs...whisk until frothy. Pour dry ingredients into the large bowl with the wet ingredients. Stir gently until just combined...not too much stirring.
Pour into waffle iron to cook until VERY light brown and then let cool completely on a bakers rack. On a cookie sheet lay a sheet of plastic wrap on the bottom. Lay one whole waffle on cookie sheet and cover with another piece of plastic wrap...continue until all the cooled waffles are pilled on top keeping them level. Then freeze overnight.
To serve break off a square out of the freezer for your toaster and toast until golden brown.
I like to then put the whole stack of waffles in a gallon sized ziplock bag for the freezer...when the waffles are frozen they don't get stuck in the toaster.
Just don't tell the kids what's in these. My kids say that these are the best waffles ever! Make sure to make them the night before in secret and then freeze them and toast them in the morning!

Whole Wheat Pumpkin Muffins by GeorgiaPeach 2 c. sugar 1/2 c. vegetable oil 3 eggs 1 1/2 c. canned pumpkin 1/2 c. water 3 c. whole wheat flour 1 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1/2 tsp. cloves 3/4 tsp. cinnamon 1 tsp. nutmeg 1 c. raisins 1 c. walnuts
Notes: You could probably cut down the amount of sugar called for here. You could probably also substitute plain yogurt for the oil. I believe that I have made these without letting batter stand at room temp. for the hour it says to.
In a large bowl, mix together sugar, oil, eggs, pumpkin and water. In small bowl mix together flour, baking powder, baking soda, salt and spices. Add to first mixture and blend together with electric mixer. Add raisins and walnuts. Let stand one hour at room temperature. Grease muffin tins for 24 muffins. Bake 15 minutes at 400 degrees. Muffins freeze well.

Breakfast Casserole by Linderlou 1 lb pork sausage 6 to 10 slices bread, crusts trimmed 2 cups shredded Cheddar cheese 8 to 10 eggs, beaten
Preheat oven to 350° Brown sausage in skillet, stirring until crumbly, drain. Line bottom of greased 9x13-inch baking dish with bread. Layer cheese and sausage over bread. Pour eggs over layers. Chill, covered, overnight. Bake for 30 minutes or until center is set.

Sausage Quiche by Linderlou 12 oz. sausage 1/4 c. chopped onoin 1½ c. shredded cheddar cheese 1 tbsp flour 1 unbaked deep-dish pie shell 2 eggs 1 c. evaporated milk 1/3 c. Parmesan cheese 1 tbsp chopped parsley 3/4 tsp salt 1/4 tsp pepper
Preheat oven to 350°. Brown sausage with onion in skillet, sitrring until sausage is crumbly; drain. Stir in Cheddar cheese and flour. Spoon into 9-inch, unbaked pie shell. combine eggs, evaporated milk, Parmesan cheese, parsley, salt and pepper in mixer bowl. Beat on medium speed until smooth. Pour into pie shell. Bake for 35 to 40 minutes or until set.
