Ham and Swiss Quiche by Linderlou I got this recipe on the back of a bag of Kroger Swiss cheese. It's yummy and easy. It's a little harder if you make your own crust like I did, but well worth the extra time if you don't have a frozen or fresh ready-made pie crust on hand.
1 unbaked 9-inch deep dish pie shell 1 (12 fl oz) can evaporated milk 3 large eggs 1/4 cup all purpose flour 1 cup shredded Swiss cheese 1/2 cup cooked diced ham 1/4 cup green onions, sliced (I used 1 Tbsp of dried, minced onions) 1/2 teaspoon dried thyme 1/4 teaspoon salt 1/8 teaspoon ground black pepper (I used lemon pepper)
DIRECTIONS
1. Preheat oven to 350°F. 2. Prick thawed (if frozen) pie shell generously with a fork. 3. In a large bowl whisk together evaporated milk, eggs and flour until smooth. Stir in 1/2 cup Swiss cheese, ham, onion, thyme salt and pepper. Pour mixture into pie shell; sprinkle with remaining cheese. 4. Bake for 45 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 5 to 7 minutes before serving. 5. Refrigerate any leftovers. 6. Serves 6

Toast 4 A Crowd by deardaughterofeve Most electric toasters only accommodate 2 to 4 slices of bread—a problem if you're hosting a large group for breakfast or brunch. Mary Woosypiti of Cherokee, Okla., came up with an ingenious way to toast enough bread for a crowd.
Place an oven rack in the middle position; place a second rack in the lower-middle position; then place a baking sheet on the lower rack. Heat the oven to 450 degrees, then arrange bread slices between every other bar on the upper rack, resting on the baking sheet. Toast the bread until the top sides are lightly browned, about 6 minutes. Using tongs, flip the slices and continue toasting the second side, about 6 minutes longer.

Vegetable Frittata by writermom 1 medium onion, chopped (1/2 cup) 1 clove garlic, finely chopped 1 medium green or red bell pepper, chopped (1 cup) 2 small zucchini, chopped (2 cups) 1 small tomato, chopped (1/2 cup) 1/4 teaspoon salt 1/4 teapsoon pepper 1 1/2 cups fat-free cholesterol-free egg product 1/4 cup grated Parmesan cheese
Heat oven to 375°.
Melt margarine in 10-inch ovenproof skillet over medium-high heat. Cook onion and garlic in margarine 3 minutes, stirring frequently. Stir in bell pepper; reduce heat to medium. Cook about 2 minutes, stirring occassionally, until crisp-tender. Stir in zucchini, tomato, salt and pepper. Cook 4 minutes, stirring occasionally. Stir in egg product.
Bake 10 to 12 minutes or until set in center. Sprinkle with cheese. Cut into wedges.
Note:I don't have an ovenproof skillet. After I added the zucchini, tomato, salt and pepper, I removed the pan from heat, added my egg beaters, and poured into a round quiche dish. You could probably use any round bakeware pan. I also only used 1 zucchini. It was very good.

Cheddar and Chile Egg Casserole by writermom 3 Tbsp. butter, melted 5 large eggs, beaten 1 cup cottage cheese 1/2 cup shredded cheddar cheese One 4oz. can diced green chiles 1/4 cup flour 1/2 tsp. baking powder Salt
1. Preheat the oven to 350°. Brush an 8-inch square baking dish with 1 tbsp. butter and set aside.
2. In a medium bowl, whisk together the eggs, cottage cheese, cheddar cheese, chiles, flour, baking powder, 1/2 tsp salt and the remaining 2 Tbsp. butter. Pour into the prepared dish and bake until set, about 35 minutes.
NOTE: I sprayed my pan with non-stick spray and it worked fine. I also added one small tomato - YUM!

Bacon Cheddar Pinwheels (by MOMo) It's fast and easy...and I fry off a lot of bacon at once and freeze it...so this was really simple.
2c. flour 3 t. baking powder 1/4 t. salt 1/3c. shortening 3/4 c milk 1/2 lb. crumbled bacon 3/4 c. cheddar cheese
Combine flour, baking powder and salt. Cut in shortening. Add milk and mix well, knead about 6-8 times. Roll out to 16X10 rectangle. Sprinkle with bacon and cheese. Roll up from long side, cut into 15 slices and put cut side down in muffin cups. Bake 12-15 minutes until golden.
Makes 15.

Potato and Onion Frittata (by MOMo) This was easy...
3 T Olive Oil 2 med potatoes, sliced thin 2 onions, red, vadalia..whatever 3/4 t salt pepper to taste 1 clove garlic 4 eggs, whole 4 egg whites 3T parsley
In skillet, add 2 T oil, potatoes and onions. Cook until fork tender. Put aside to cool-add garlic. Cool about 20 minutes. Add last 1 T oil, egg mix and put on heat for about 8 minutes or until bottom is starting to set. Then under broiler for just to finish up the top for about 3-4 minutes. Easy and I doubled the recipe and just used whole eggs...it turned out great and fast.
I also used my electric skillet with removable pan...was done in a flash.

Bran muffins by MommaK 4 Eggs 3 C. Sugar 1 C. Oil 5 C. Flour 5 tsp. Baking Soda 2 tsp. Salt 1 Quart Buttermilk 15 oz. box Raisin Bran Cereal ½ - 1 C. Raisins
Beat eggs in large container. Add sugar and oil. In separate container mix flour, soda and salt. Add dry ingredients to egg mixture alternately with buttermilk. Finally add cereal and extra raisins. Oatmeal blueberry muffins by Melissa
1 1/4 cups flour (un-bleached) 3/4 cup oatmeal 1/3 cup sugar (more if you have a sweet tooth) 2 teaspoons baking powder 1/4 teaspoon salt 1 egg 3/4 cup milk 1/4 cup cooking oil vanilla (I just eyeball it) 1/3 bag frozen blueberries
Mix sugar, milk, cooking oil, vanilla and eggs Add salt and baking powder Stir in flour and oatmeal Add blueberries (I perfer more, again eyeball it)
Spoon batter into muffin cups. Bake 16-20 min at 400* (slightly golden). Makes 12 muffins.

Blueberry buckle (like my mama made!) by mamamunchkin 2 c flour 1 c sugar 2 1/2 tsp baking powder 3/4 tsp salt 1/4 c shortning 3/4 c milk 1 egg 2 c blueberries
Mix and pour in 11 x 7 pan
Mix 1/2 c brown sugar, 1/3 c flour, 1/2 tsp cinnamon 1/4 c butter (soft) and sprinkle on top.

breakfast ideas (by Hadley) Please give me all your ideas! This is the hardest meal for us. It's just me and the kids...
What I have so far:
Cinnamon toast frozen waffles grits biscuits
Oatmeal.
Scrambled egss. Sometimes we do these into breakfast burritos with eggs, cheese and either sausage or bacon if we have it. You can actually even premake these, wrap them and freeze them. Then just microwave them (if you have one) for breakfast.
You can also precook & toast pancakes.
Scones/biscuits (totally yummy warmed up with butter!!) with raisins, bits of ham, bits of cheese, bits of both ham & cheese.
Fruit parfaits-yogurt, granola, fresh fruit. These can be made the night before. My nephew calls them breakfast Sundae's.
Cereal!!
toast with jelly or with peanut butter or with cin/sugar oatmeal waffles pancakes (homemade then frozen for later) egg mcmuffins scrambled eggs & sausage french toast english muffins bagels cereal bars granola bars & yogurt fruit & yogurt jimmy dean breakfast sandwiches (kids love 'em, they are $$$ and a treat) soft boiled eggs w/bread hard boiled eggs on toast french toast sticks
muffins: banana, blueberry, orange cranberry, sunshine, apple oatmeal, tropical... w/a piece of cheese and some apple slices.
fruit smoothies (using mixed frozen fruit).

Ham 'N Egg Tortilla Bake (by dyna327) Got this from All Recipes.com
INGREDIENTS 1 cup sliced fresh mushrooms 1 medium onion, chopped 1/2 cup chopped green pepper 1/4 cup butter or margarine 6 eggs 1/4 cup milk 1/4 teaspoon pepper 1 cup cubed fully cooked ham 1 (10.75 ounce) can condensed cream of mushroom soup, undiluted 10 (8 inch) flour tortillas 1 1/2 cups shredded Cheddar cheese
DIRECTIONS In a large skillet, saute the mushrooms, onion and green pepper in butter until tender. Meanwhile, in a bowl, whisk together the eggs, milk and pepper; add the ham. Pour into the skillet. Cook and stir over medium heat until eggs are completely set. In a greased 13-in. x 9-in. x 2-in. baking dish, spread half of the soup. Place 3 tablespoons egg mixture down the center of each tortilla; sprinkle each with 1 tablespoon cheese. Roll up and place seam side down over soup. Spread remaining soup over tortillas. Sprinkle with remaining cheese. Frittatas (by fivesweeties)
Frittatas are easy and make a wonderful, nutritious breakfast.
Choose a large, round pan that is oven-safe. Saute ANYTHING you'd like to have in your frittata. Here are some examples:
Finely chopped onion and a couple of shredded potatoes Chopped, fresh spinach and sliced portabella mushrooms Chopped tomatoes and green peppers ANY combination of the above, or anything else your family likes
Be sure to use REAL BUTTER when you saute.
Next, crack 8 eggs into a bowl and whisk them until they're light yellow. Pour the eggs over the sauted veggies.
Place the whole pan into a preheated, 400 degree oven. Bake for 15 minutes. Top with your favorite sliced or shredded cheese (sharp cheddar or aged Swiss are delicious), and return to oven just until cheese melts, a couple of minutes more. Serve immediately with some fresh fruit on the side.
Makes 8 servings. (You cut it into wedges like a pie.)

Question (by StillJulie) do you have an easy recipe for cinnamon rolls? I'm thinking you might use that same dough recipe that I've used of yours for pizza crust... What else do I need to know to make good cinnamon rolls?
Answer (by emyanne) i do use the same dough.....although half the liquid i usually make milk instead of water.......and if i have a halfcup of mashed potatoes around, i add that (it all helps make their texture softer)...
after the dough raises the first time, you roll it out in a long rectangle and then rub butter or margarine on it, enough to coat.
sprinkle rather heavily with cinnamon and sugar mixture (enough to make it all brown).
then on the bottom of a 9 x 13 pan, i sprinkle some brown sugar and cinnamon and little bits of butter.
roll the dough into a long log.
slice into 12 slices and spread them out in the 9 x 13 pan.
let rise again on stove (or however you let dough rise).
bake til brownish and puffy.........i don't remember the exact time, i'm thinking 20-30 minutes.

CInnamon Graham Crackers (by MommaK) 2 C. whole wheat flour 1 C. white flour 1 tsp. baking powder ½ tsp. baking soda ¼ tsp. salt ½ C. shortening ¾ C. brown sugar 1/3 C. honey 1 tsp. vanilla ½ C milk s Tbsp. Sugar 1 tsp. cinnamon
Combine first 5 items. Cream shortening and brown sugar. Beat in honey and vanilla. Add flour mixture alternately with milk to creamed mixture. Beat well. Chill several hours or overnight. Divide in quarters. On well floured surface roll each quarter in a 15 X 5” rectangle. Cut rectangle crosswise into 6 smaller rectangles ( 5 X 2 ½) Place on ungreased cookie sheet. Mark a line across center of each and score pattern of holes with tines of a fork. Sprinkle with cinnamon mixture. Bake at 350 for 13 – 15 minutes. Remove immediately from baking sheet. not a recipe, but i made this up after listening to Farmer Boy (a little house book)
slice apples, small amout of butter in pan, stir fry a bit on low heat till soft, sprinkle w/ sugar and cinnamon, serve over icecream or in a bowl.
we thought it was wonderful, and made the house smell great
1 apple was enough for a treat for my kids
