Super Hot Dish - BugzNBallet
This rocks!!
1.5 lbs ground beef 1 package Lipton's dry onion soup mix 1 can cr. of mushroom soup 1 can cr. of celery soup 1 package (10 oz) frozen mixed vegetables 1 can water chestnuts (small) 1 pkg tater tots (small)
Saute ground beef in butter Add onion soup mix. Add other ingredients and mix well. Place in large casserole. Place frozen tater tots closely together on top. Bake at 350 degrees for one hour.

Chow Mein Hot Dish - BugzNBallet
1 lb ground beef 1 chopped onion 1 cup celery chopped 1/2 cup uncooked rice 2 cups water 1 can mushroom soup 1 can chicken rice soup 4 T. soy sauce 2 T. Worcestershire sauce Chow mein noodles
Brown onion and hamburger together. Mix in remaining ingredients. Bake in greased casserole, covered, 1 hour and 15 minutes at 350 degrees. Remove from oven and sprinkle several handfuls of chow mein noodles over the top. Return to oven for 15 minutes more.

Taco Casserole- BugzNBallet
1 package cresent rolls (8) 2 lbs hamburger 1 package taco seasoning 1 8 oz. sour cream 1 egg 1 lb. Monterey Jack cheese (grated)
Roll crescent rolls out into bottom of greased 9x13 pan. Brown meat and add taco seasoning. Simmer 20 minutes. Spread over rolls. Mix sour cream & egg. Pour over the meat. Add the grated cheese. Bake 350 degrees for 25 minutes. Served with chopped tomatoes, lettuce, onions, g uacamole, olives, taco sauce.

Taco Casserole-Royalmommy
1lbs Ground Beef 1 10 oz Can Red Enchilada sauce 1 14-16 oz Can Refried Beans One bag of Tortilla Chips Taco toppings of your choice (Cheese, green onion, lettuce, tomato)
Crumble and brown beef, Drain and return to pan add enchilada sauce and refried beans. Cook until well mixed and hot. Crumble tortilla chips and place across the bottom of a casserole dish. Pour beef mixture over the chips, top with your toppings.
VERY simple meal. It takes less than 15 minutes to make, and it's VERY yummy! My very picky 4 year old loves it You can make it spicier by buying spicier enchilada sauce! I'm not 100% sure on what size can of Refried beans I use...it's just the average size can! __________________ Katy

Cabbage and Ground Beef Casserole by Betty
Brown one pound of ground beef ( I added a little onion for extra flavor). Cut up a head of cabbage and steam in some water until wilted. Grease a large casserole dish. Put drained cabbage on the bottom of the dish. Top that with the browned ground beef. Make a white sauce by melting 3 tablespoons of butter or margarine, then adding 3 tablespoons of flour with 1 teaspoon of salt and a pinch of pepper. Stir the butter and flour together to blend. Slowly add 1 1/2 cups of milk into the flour mixture stirring constantly (a wisk works well for this). Once the white sauce comes to a boil, add 1 teaspoon of parsley flakes. Pour this white sauce over the cabbage and beef. Top with 1/2 cup bread crumbs tossed in 2 teaspoons of butter or margarine. Bake for 30 minutes in a 350 degree oven.

Easy Beef & Pasta Supper Easy Beef and Pasta Supper
1 lb. ground beef, browned (from freezer) 1 onion, chopped and sauteed (from freezer) 1 28 oz. jar pasta sauce 1/2 tsp. salt 1/8 tsp. pepper 16 oz. Mueller's Ready Cut pasta (large elbows) 1/2 cup shredded cheddar cheese Cook pasta according to package directions. Drain. Combine first five ingredients over medium heat and heat until simmering. Add cooked, drained pasta and stir. Sprinkle with cheese before serving.

Crockpot Beef Casserole
Crockpot Beef Casserole
2 lbs. stew beef cut into 1 inch pieces 1 envelope onion soup mix 1 (10 1/2 oz.) can cream golden mushroom soup (substitutions) 1 (4 oz.) can whole mushrooms 1/2 cup red wine
Combine all ingredients in crock pot. Stir together well. Cover (don't peek!) and cook on low for 8-10 hours (or on high for 5-6 hours). Serve over egg noodles.
*I used water instead of wine. Also, my mom suggested that you could add sour cream at the end of the cooking time and that would make stroganoff.*

Tamale Pie - MommaK
1# Ground Beef 1 onion chopped 2 tsp. Salt ¼ tsp. Pepper 1 Tbsp. chili powder 1- 8oz tomato sauce 1- 4½ oz can sliced ripe olives 1 ½ C sharp Cheddar cheese 6 tortilla’s spread with butter 1 C. water
Brown beef and onion. Add seasonings and tomato sauce. In casserole alternate layers of tortilla, meat sauce, olives and cheese. Pour water into bottom of the casserole. Cover tightly, bake @ 400 for 20 minutes. Cut into 4 pie shape wedges

Cheeseburger Pie Modified from the bisquick box:
1 lb ground beef browned (I brown it w/ chopped onions and green pepper) 1/2 t salt (add after beef browned)
-spread beef in greased 9 in pie plate
1 can sliced mushrooms (optional) -spread over beef 1+ C shredded cheese -sprinkle over beef
Mix together:
1/2 C baking mix 1 C milk 2 eggs
Pour mixture over beef and cheese
Bake 25 minutes at 400 degrees __________________ Debbie

Burrito Bake
modified from Kraft food and family magazine
1 lb taco meat (I usually use ground beef browned w/ taco seasoning and water per pkg directions, I also brown w/ chopped onions and green pepper) 6 flour tortillas 1 can refried beans 1+ C shredded cheese
In a greased 9 in pie plate: Layer 2 tortillas, 1/2 of the meat, 1/2 of the refried beans, and 1/2 of the cheese. Then repeat (tortillas, meat, beans, cheese). Top w/ 2 tortillas.
Bake at 350 for 30 minutes
I serve w/ sour cream, may also serve w/ salsa, black olives etc...
SOme times I leave out the meat and make it vegetarian, just add the taco seasoning to the beans and heat a bit __________________ Debbie

meatballs are a favorite at our house
My meatball recipe is the same as my meatloaf recipe. It is dh's favorite meal and one of the very few meals that everyone is happy and no one complains. I make it a lot more since I figured out a few changes so that I don't have to touch the raw hamburger. I use a potato masher to mix the ingredients and I use an ice cream scoop to put it on the pan. No eeewwy gooey hands. : )
dh's meatballs
1 lb hamburger (who am I kidding? I never make less than 6 lbs) 1/2 cup bread crumbs 1/4 cup milk 2 T onion 1 t salt 1/2 t worchestshire sauce 1 egg
Cook at 400 until brown. Larry likes them extra well done so that they have crispy sections.
The kids eat these plain, but I make a sauce for the two of us.
dh's sauce (double if you double the meat)
1 can cream of chicken soup 1/3 cup milk 1/8 t nutmeg 1/2 cup sour cream (we use fat free sour cream)
Mix the meatballs into the sauce and serve over white rice.
The meatballs also freeze well and are easy to pull out for quick meatball sandwiches. __________________

No Peek Hot Beef Sandwiches
4-5 pounds beef roast 1 pkg dry onion soup mix 1 can chicken gumbo soup 1 10.5 oz can water good buns
Place fresh roast in a roaster. Pour soup over meat and add water around the edge of the meat. Sprinkle dry onion soup over the soup on the meat. Cover the roaster. Bake fiver hours at 275 degrees. Use two forks to pull apart and shred the beef. Serve on fresh rolls. __________________ Julie

Beef & Corn bake - Januinely~me
2 pounds Ground beef 2 cups Noodles; cooked 1 Onion; chopped 1 cup Cheddar; grated ¼ cup Oil 1 cup Corn kernels 2 cups Tomato soup 1/2 tsp salt (optional) ½ teaspoon Pepper 1 teaspoon Ketchup
Put beef, onion & oil in fry pan. Stir to break up meat till it browns. Drain off fat. Put meat mixture in bowl. Put corn, soup, salt & pepper & ketchup in bowl. Stir & mix with meat. Cook noodles, drain & combine with all ingredients. Pour into greased casserole. Sprinkle grated cheese on top. Cover & bake at 350F for 45 min. Remove cover & bake till cheese is bubbly. Beef Chimichangas - Januinely~me
2 pounds boneless beef chuck roast, trimmed of fat 1/4 cup water 1 1/2 cups beef broth 3 tablespoons red wine vinegar 2 tablespoons chili powder 1 teaspoon ground cumin 4 (8 inch) flour tortilla 3 tablespoons butter, melted 1 1/2 cups shredded Monterey Jack cheese 1 cup sour cream (optional) 1 cup salsa (optional)
DIRECTIONS Place roast in crock pot. In a medium bowl, combine beef broth, red wine vinegar, chili powder and cumin. Pour over beef. Cover, and cook until meat is very tender, and pulls apart easily. Allow to cool, then shred and mix with pan juices. Preheat oven to 500 degrees F (260 degrees C). Brush both sides of each tortilla with melted butter. (I use olive oil) Spoon shredded beef filling down center of each tortilla. Fold ends over filling, then fold sides to center to make a packet. Place chimichangas, seam side down, in a 9- by 13-inch baking pan. Bake in preheated oven for 8 to 10 minutes, or until golden brown. Serve with shredded cheese, sour cream and salsa.
We had enchilada sauce on these last time and it was amazing!!!
Enchilada sauce:
2 cloves garlic -- peeled & cut in half 3 TBSP oil 2 TBSP flour 1/4 Mexican chili (no substitutes) 2 cups beef broth 15 oz can tomato sauce 1/4 tsp cumin sprinkle of cinnamon
Saute garlic & discard. Stir in flour & cook 1 minute, Stir in chili powder. Gradually add broth, tomato sauce & seasonings. Simmer 15 minutes. Pour like gravy over bit chimichangas once they are on plates.

Dorito Casserole adapted from a recipe I found on the internet - Laney
Casserole Ingredients ~1 large 13 ounce package of Doritos (save 2 cups for topping) Another note - I use Aldi brand Nacho flavor chips not name brand Doritos. ~1 10 ounce can of chili with beans ~1 lb cooked ground beef ~1 8 ounce can tomato sauce ~1 1/2 cups of shredded cheddar cheese
Topping Ingredients ~2 cups Doritos ~1/2 cup of Shredded Cheddar Cheese ~1 1/4 cups sour cream
Directions Preheat Oven to 375 Degrees. ~Crumble 6 cups of Doritos (just crush them in the bag) ~Add the cooked ground beef, chili, tomato sauce and 1 1/2 cups of cheddar cheese to the crumbled Doritos. Stir with a spoon to combine. Place mixture in a 9 x 13 oven proof casserole dish. ~Bake 20 minutes. ~Remove from oven. Spread the sour cream over the top. Top with 2 cups of Doritos. Sprinkle with 1/2 cup cheese. Bake another 5 minutes & Serve.
