Rolled Tacos... -------------------------------------------------------------------------------- Easy, but do require shallow frying..
Left over roast- Sliced into long slices (I use 1/2 of a roast and cook it for this purpose with cumin, salt and pepper) Lettuce- sliced in same fashion as lettuce Corn Tortillas- warmed so you can work with them
Wrap a few slices of roast and lettuce in corn tortilla and put in frying pan of hot oil... cook until golden turning once. Serve with salsa, sour cream and guacamole.

What to do w/1# beef kielbasa sausage (various)
need dinner ideas for a 1lb beef keibasa sausage.... -------------------------------------------------------------------------------- my family does not like onions or pepers (I can leave it out of a recipe) but other than that I think they will try anything. What do you do with it when you make it?
I usually... -------------------------------------------------------------------------------- fry it up on the stove, cut into 1 inch rounds, once they are almost cooked I drizzle maple syrup over them and simmer for a bit. I serve with mac and cheese and broccoli
we call it the "college meal" because me and dh ate it ALLL the time in college, because one of those kielbasa rope sauage things lasted us for two meals, so I would get those and cheap mac n cheese....the fruit or veggie changes sometimes...
I buy those shredded hashbrowns..usually have some in the freezer. I cook them as directed, and then when they are almost done, I put in the sliced sausage and brown a bit. Then I scoop that all to the side and scramble an egg or 2. Then I mix it all up. We eat ours with salsa on top, but I have sprinkled shredded cheese over it all too.
I cut it up, toss it into a dish w/ sliced potatoes -------------------------------------------------------------------------------- and add seasoned salt, garlic powder, a bit of butter and 1/4-1/2 cup water (to prevent sticking) bake at 350 until potatoes are tender.
like to cut up about 4 potatoes into small cubes and fry them with onion powder and garlic powder. When the potatoes are almost done frying I cut up the Kielbasa into 1/2 inch slices and put it in the pan with the potatoes. It needs to be stirred often so that the Kielbasa doesn't burn. Then we sprinkle cheddar cheese on top and garnish with sour cream (me) or hot sauce (dh)

1 Can Cream of Mushroom Soup 1 1/2 Cups of water 1 Tablespoon Butter or Margarine 1 Pound Kielbasa, cut into 1/2 inch pieces 3/4 Cup uncooked long grain rice 10 ounces frozen peas 4 1/2 ounces sliced mushrooms, drained 1 Cup shredded cheddar cheese
In a skillet, combine soup, water and butter; bring to a boil. Add kielbasa and rice. Reduce heat; cover and simmer about 18 minutes or until rice is almost tender. Stir in peas and mushrooms. Cover and simmer 15 minutes or until rice is tender and peas are heated through. Sprinkle with cheese; cover and let stand until melted.
I usually cut it up and cook it and serve it with rice!!
I usually cut it up and brown it with some onion (omit of course if your peeps wont eat onion) , then add a can of diced tomatoes, a head of fresh broc. chopped up, and some salt and basil to taste, cover the skillet until the broc is tender/crisp and the tomatoe has condensed some. Then I pour this into a big bowl with some cooked rotini noodles, stir it all up and viola. (sometimes when I put the tomatoes/salt/basil in I add a dash of sugar, sometimes depends on who is eating it).
Of some red potato slices and fresh green beans. Salt and pepper to taste. Steam the whole thing until the potatoes are cooked through. The green beans get really cooked, so if you dont like them kind of mushy add them later.
here's the easiest way... -------------------------------------------------------------------------------- cut into slices and dump into crockpot! Dump brown sugar over entire thing! Simmer for hours! Check after a bit to see if you need more brown sugar to coat!
Eat as hor'derve or serve with white rice and a veggie for dinner!!
My dh loves it with saukerkraut, potatoes, and boneless pork ribs. I just put it all in the crockpot and let it cook most of the day. Enjoy!

Yes, I use ground beef! I fry it up with garlic, basil, onions (usually minced from the pantry and not fresh) and whatever else I think might taste good! Dump it in a casserole dish! Open a can of cream style corn and dump on top! If it's alot of meat I sometimes use 2 cans! Sometimes I add frozen corn to that but not usually! Cook & mash potatos as I regularly would and dump those on top of everything! Sprinkle with parmesan cheese, salt & pepper! Bake at 350 for 30 minutes or so!!
The kids love it and Joshua lives on it! So easy!!

Directions *PREHEAT oven to 375°F. Brown meat in large skillet; drain. ADD vegetables and gravy to meat; mix well. Spoon into 8-inch pie plate; cover with Potatoes. BAKE 20 to 25 minutes or until lightly browned
**if desired, sprinkle w/ cheddar and return to oven for 5 min

Yakky's YUMMERIFIC Beef and Broccoli
Marinade: 2 tsp. soysauce 1 TBSP wine or cooking wine(sherry) 1 TBSP cornstarch 1 TBSP oil
ADD: 1 pound of beef, thinly sliced in bite size pieces. Marinate for at least 15 minutes. I've done it at short as 15 minutes and as long as 2 hours ahead of time.
Separate 1 pound broccoli florets... if you use the stem, slice it thinly.
Cook for 1 minute in boiling salt water. Drain, rinse with cold water. If you use frozen broccoli, like i tend to do now, i just nuke it til it's partially warmed.... it's already been blanched once...
Heat 3 Tbsp. oil in wok, large skillet, or large pot. ADD: 2-3 cloves chopped garlic and 3-4 slices ginger root. Stir for 15 seconds. THEN add beef, stir fry until beef turns color and is no longer red. *if i don't have fresh ginger root i have a tube of ginger that i just squeeze some out of... when stir frying the meat is when i add it. also, stilljulie says you can freeze ginger root and then it lasts forever*
OK, so once the meat has turned color add the broccoli, 2 tsp. sugar and 2 TBSP soysauce. Stir fry one minute more til all is HOT.
EAT over RICE!
my kids LOVE IT... even the broccoli! actually most ESPECIALLY the broccoli!

Cincinnati Chili Recipe
1 large onion chopped 1 pound extra-lean ground beef 1 clove garlic, minced 1 tablespoon chili powder 1 teaspoon ground allspice 1 teaspoon ground cinnamon 1 teaspoon ground cumin 1/2 teaspoon red (cayenne) pepper 1/2 teaspoon salt 1 1/2 tbsp unsweetened cocoa or 1/2 ounce grated unsweetened chocolate 1 (15-ounce) can tomato sauce 1 tablespoon Worcestershire sauce 1 tablespoon cider vinegar 1/2 cup water 1 (16-ounce) package uncooked dried spaghetti pasta Toppings (see below)
In a large frying pan over medium-high heat, saute onion, ground beef, garlic, and chili powder until ground beef is slightly cooked. Add allspice, cinnamon, cumin, cayene pepper, salt, unsweetened cocoa or chocolate, tomato sauce, Worcestershire sauce, cider vinegar, and water. Reduce heat to low and simmer, uncovered, 1 1/2 hours. Remove from heat.
Cook spaghetti according to package directions and transfer onto individual serving plates (small oval plates are traditional).
Ladle chili over spaghetti and serve with toppings of your choice. Oyster crackers are served in a separate container on the side.

I'd adjust the cinnamon next time around. Dh said it was too much. I think Linderlou orginally gave me a recipe for this and I just now got around to making it. Yummy!!!! Will be making it again.

1 lb ground beef 2 cups water 1 cup salsa 1 pkg Kraft Deluxe mac n cheese 2 cups frozen corn 1/2 c shredded cheddar or mexican cheese 1 green onion, chopped
Brown meat in a skillet, drain. return to skillet. Stir in noodles, water, and salsa. Cook 10 mins. Add corn and cheese (from mac and cheese). Cook 2 mins. Put in bowls and top with shredded cheese and green onions.

Salisbury Steak -------------------------------------------------------------------------------- 1.5 lbs ground beef 2 scallions, finely chopped 1 tbsp mustard 1/2 c water 1/2 lb mushrooms 1/4 cup Italian bread crumbs 1 egg 1 container beef gravy
coat pan w/nonstick spray in bowl mix beef, scallions, bread crumbs, egg, mustard. shape into 4 1/2 inch thick oval patties heat skillet over med high heat cook 3 to 4 on each side Add remaining ingredients Cook 4 to 5 mins
I serve with mashed potatoes. YUM!

Yes, I make it . . . recipe inside -------------------------------------------------------------------------------- 1 sheet of puff pastry (from the freezer section of the store) 2 c. crushed corn chips 1-2 lb. taco meat 1 c. sour cream 2 c. cheddar cheese
Spray the bottom of a 9x13 pan and line with the puff pastry. Sprinkle 1 c. of crushed corn chips on the pastry. Then layer the taco meat, sour cream, and the rest of the corn chips. Top with the cheddar cheese. Bake at 375 about 45-60 minutes or until puff pastry is golden brown.

What to do w/1# hamburger (various)
taco's hamburger gravy hamburger stroganoff pizza burgers spaghetti foxy's meat and potato casserole
spagetti, tacos, meatloaf, hamburger helper....
hamburger gravy: brown meat... salt and pepper liberally leave grease and add 2 tbsp. flour mix together in pan. add milk. start with 1-2 cups. stir til it starts to thicken continue to add milk until it is at the consistency you desire
eat on top of rice, noodles, or mashed potatoes.
hamburger stroganoff: brown meat... salt and pepper while frying drain grease add 1-2 cans cream of mushroom soup let it simmer for an hour add 1 cup sour cream... stir in.
serve over noodles or rice
Pizza burgers brown meat (w or w/o onion) drain grease add 1 can tomato soup add 2 tsp. basil and 2 or 3 tsp oregano let cook for 10 min or so on low. turn heat off. let cool some.
then add 1 cup mozz. cheese and 1/2 cup cheddar cheese. broil on any kind of bun or toast til cheese melts.

Taco Pie by 10isntenough
Taco Pie
1/2 lb. lean ground beef or turkey
1 deep-dish pie crust
1 packet taco seasoning
1 can refried beans
1 8 oz jar salsa
shredded cheese (Mexican blend)
crushed tortilla chips
Diced tomato, lettuce, sour cream, black olives, etc.
Bake pie crust according to package directions. Brown ground beef; drain. Add taco seasoning and 1/3 to 1/2 cup water. Stir to coat.
Mix beans and salsa in bowl. Spread bean mixture in bottom of pie crust. Add half the ground beef.
Top with tortilla chips and cheese. Repeat with a second layer of ingredients.
Bake at 350 degrees for about 20 minutes, or until the cheese is melted. Let cool for about 10 minutes.
Slice as you would a pie, and top with lettuce, tomato, sour cream, and any other taco condiments you desire. Add a green salad for a very filling meal.

Lamb's MEATY Spaghetti Sauce
here's the sauce recipe you asked for... only 3 days later!!
MEATY SPAGHETTI SAUCE 1 lb. ground beef 1 lb. bulk Italian sausage 1 medium green pepper, chopped 1 medium onion, chopped 8 garlic cloves 2 cans (14.5 oz each) Italian diced tomatoes 2 cans (15 oz each) tomato sauce 2 cans (6 oz each) tomato paste 1/3 cup sugar 2 tablespoons Italian seasoning 1 tablespoon dried basil 2 teaspoons dried marjoram 1 teaspoon salt 1/2 teaspoon pepper
In large skillet over medium heat, cook beef & sausage til no longer pink! Transfer to slow cooker (crock pot... whatever) and add everything else! Cover and simmer for 8 hours or so!
Now... here's what I do !!
No onions or peppers... I dump in some minced dried onions if I have them!
No Italian diced tomatoes unless I happen to have that kind... I just use regular ol' diced tomatoes (I always buy the petite ones)
Never use fresh garlic... although I bet it's even yummier with that!!
Never use that much meat! I use 1 bulk sausage (usually hot or sage by Jimmy Dean... or sometimes maple... kids LOVE the maple one )! I use hamburger if I have some on hand... not a whole pound usually tho... sometimes none!
I usually only use 2 cans of the diced, 1 can of paste and 1 can of sauce when I only use the 1 lb. of meat!!
Never use marjoram... don't have any!!
Usually use more basil than called for... love basil!
I've always been asked for the recipe when I serve it to company and I feel bad cause I never follow the recipe!!

Hamburgers in Onion Gravy
1 lb. ground beef 1 egg 1/4 c. Ritz cracker crumbs, fine 1/8 tsp black pepper 1/2 tsp seasoned salt 1/2 tsp each garlic powder and onion powder 1 tsp Worcestershire sauce Mix together and form into 8 patties. Fry in 1 Tbs olive oil til browned, about 4 minutes per side. Remove from pan. In pan add 1 cup thinly sliced onion. Over this sprinkle 2 Tbs flour. Stir together. Gradually add 1 cup of beef broth and 1/2 tsp seasoned salt. Simmer and stir 5 minutes. Add beef patties to mixture and simmer for 15-20 minutes.

2 tablespoons vegetable oil or corn oil 2 medium onions , chopped fine (about 2 cups) 1 red bell pepper , cut into 1/2-inch cubes 6 medium cloves garlic , minced or pressed through garlic press (about 2 tablespoons) 1/4 cup chili powder 1 tablespoon ground cumin 2 teaspoons ground coriander 1 teaspoon dried oregano 2 pounds 85 percent lean ground beef 2 (15-ounce) cans black beans , drained and rinsed 2 quarts tomatoes canned from the garden Table salt 2 limes , cut into wedges
1. Heat oil in large heavy-bottomed nonreactive Dutch oven over medium heat until shimmering but not smoking, 3 to 4 minutes. Add onions, bell pepper, garlic, chili powder, cumin, coriander, pepper flakes, oregano, and cayenne; cook, stirring occasionally, until vegetables are softened and beginning to brown, about 10 minutes. Increase heat to medium-high and add half the beef; cook, breaking up pieces with wooden spoon, until no longer pink and just beginning to brown, 3 to 4 minutes. Add remaining beef and cook, breaking up pieces with wooden spoon, until no longer pink, 3 to 4 minutes.
2. Add beans, tomatoes, and 1/2 teaspoon salt; bring to boil, then reduce heat to low and simmer, covered, stirring occasionally, for 1 hour. Remove cover and continue to simmer 1 hour longer, stirring occasionally (if chili begins to stick to bottom of pot, stir in 1/2 cup water and continue to simmer), until beef is tender and chili is dark, rich, and slightly thickened. Adjust seasoning with additional salt. Serve with lime wedges and condiments if desired.
Slow Cooker Option: At the end of step 1, transfer the cooked beef mixture to a slow cooker; add the rest of the ingredients as directed in step 2. Cook the chili on the high setting for four hours.
