Crockpot Tender Steaks by Writermom
My own simple recipe:
Brown tender cut steaks in olive oil, salt and pepper and flour
Place in the bottom of crockpot. Top with 4-5 minced garlic cloves and one chopped onion. Top with potatoes and carrots or whatever veggies you want. Cook on low. You can add a bit of flavor by adding a few dry bay leaves.
My steaks fall apart and the kids can eat them. I don't add any liquid. They make their own liquid.

Peel several potatoes and cut into chunks. Dump in a 2 pound bag of mini carrots. Chunk 2 onions on top of carrots. Take 3 pounds of hamburger and form into meatballs. Put on top of veggies. Mix 1 TBSP salt, 1 cup ketchup, 1/2 cup vinegar, 1 TBSP basil and 1/2 cup water. Pour over meatballs and cook on high for 4 to 6 hours in the crockpot or 8 to 10 hours on low.

Meatball Subs by dianaq Meatball subs -------------------------------------------------------------------------------- 2 lbs of precooked meatballs (I get mine in bulk at costco) 1 jar of Prego 3 Cheese sauce line bottom of crock pot with meatballs and stack from there up to desired amount. dump in 1 to 2 jars of prego sauce, cook on low for 8-10 hours or as little as 3 hours. The meatballs are so good being cooked all day though. serve up on sara lee hot dog buns(they hold sauce best) and enjoy
It takes me all of 3 min to prepare this meal. it is a great idea for quick meal night.with little work

Mushroom chili (also uptown chili) -------------------------------------------------------------------------------- Uptown Down-Home Chili
3 tablespoons extra-virgin olive oil, divided 2 pounds ground sirloin 2 tablespoons grill seasoning (recommended: McCormick's Montreal Steak Seasoning) a palm full 1/2 pound baby Portobello mushrooms, chopped 1/4 pound shiitake mushroom caps, sliced 1 medium yellow skinned onion, chopped 3 ribs celery, chopped 4 to 6 cloves garlic, chopped 2 tablespoons Worcestershire sauce 2 canned chipotle peppers in adobo, chopped, with their juices or 1 generous palm full ground chipotle chili powder, about 2 tablespoons 1 tablespoon ground cumin, half a palm full 1 bottle imported beer (I use beef broth instead) 1 (15 ounce) can black beans, drained 1 (15 ounce) can crushed tomatoes 1 cup beef stock (8-ounce box) 2 to 3 tablespoons fresh thyme leaves 8-ounce piece smoked Gouda, shredded 1 small white onion, finely chopped
Heat a deep, large skillet or a pot over high heat. Add 2 tablespoons extra-virgin olive oil and the meat. Season it with grill seasoning and sear it up, browning and crumbling it, for 3 to 5 minutes. Transfer meat to a plate and return pot to stove. Reduce heat to medium- high and add another tablespoon extra-virgin olive oil. Add the mushrooms and begin to brown them before adding the other veggies. After 2 or 3 minutes the mushrooms will begin to shirk and soften. Push the mushrooms off to one side of the pot and add all the remaining veggies to the opposite side of the pot surface. Once the onions, celery, peppers and garlic have been working for a few minutes as well, mix the veggies with the mushrooms. Add the meat back, season with Worcestershire sauce, chipotle in adobo or chipotle powder and cumin. Add in beer to deglaze the pot, scraping up all the pan drippings. Reduce the beer by half, about 2 minutes. Add the black beans, tomatoes, stock and thyme to chili and simmer 10 minutes for flavors to combine. Taste to adjust seasonings. Taco Casserole (Type 2 Diabetes Cookbook)
8 oz. pkg. med-width noodles, such as fettuccine 1 1/2 to 2 lbs lean ground beef 1/4 cup diced onion 2 Tbsp. diced celery 2 Tbsp. diced green pepper 1/4 cup "lite" sour cream 1 package taco seasoning mix 28oz. can stewed tomatoes
1. Boil noodles per package directions. Drain and set aside.
2. In a skillet, brown ground beef and drain off fat. Add onion, celery, green pepper, and sour cream. Simmer for 10-12 minutes.
3. Preheat oven to 350°. Transfer meat mixture to a large casserole dish. Add noodles to the meat mixture. Add package of taco seasoning and stewed tomatoes. Stir until well blended. Bake at 350° for 45 minutes to 1 hour, until hot and bubbly.
Yield: 5 cups, 10 servings (1/2 cup serving) calories 240
Note: I used a 12 oz. box for my large family, and used about a half of a green pepper ( I didn't measure). I think it's also easier to distribute the taco seasoning, by mixing it into the meat mixture before you add it to the noodles. I let my kids top it with shredded cheddar cheese. YUM! For us I used whole wheat noodles also.

Tater Tot Casserole
TATER TOT CASSEROLE
1 can cream of mushroom soup 8 oz. sour cream 1 bag tater tots 1 cup shredded sharp cheddar cheese 1 lb of ground hamburger meat serves: 6 or 7
Brown hamburger meat. Add cream of mushroom soup, sour cream and cheese. Stir together until blended.
Place hamburger mixture in the bottom of a casserole dish. Lay tater tots neatly on top of the mixture.

Marinated Sirloin for Father's Day.
Burgundy(1-2 cups/1 per sirloin) fresh minced garlic(1 tsp) 1Tblsp. Si-Si Cilantro from Tastefully Simple 1Tblsp. black pepper 1/2-1c. olive oil.
Pound on your sirloin with a meat mallet with the rough side. Place in Ziplock and suck all the air out as best you can. Leave on counter for 20 minutes while grill is heating up. Cook on grill to your liking.
SOOO good, and EASY!

Inside-Out Bacon Cheeseburgers with Grilled Green Onion Mayo Recipe courtesy Rachael Ray
5 slices bacon, chopped 4 scallions, cleaned and trimmed Extra-virgin olive oil, for drizzling 1 1/3 pounds ground beef sirloin 1 tablespoon Worcestershire sauce, eyeball it 1 tablespoon steak seasoning blend or coarse salt and black pepper 1/2 pound extra sharp white cheddar cheese, crumbled 1 cup mayonnaise or reduced fat mayonnaise 1 teaspoon ground cumin Salt and pepper 4 crusty Kaiser rolls, split 4 leaves crisp romaine lettuce
Preheat grill pan over high heat. In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.
Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.
Combine ground beef with Worcestershire and steak seasoning or salt and pepper. Divide meat into 4 equal parts. Combine cheese crumbles and cooked bacon. Take 1/4 of the meat in your hand and make a well in the center of it. Pile in cheese and bacon, then carefully form the burger around the cheese and bacon filling. Make sure the fillings are completely covered with meat. When all 4 patties are formed, drizzle burgers with oil and place on hot grill pan. Cook 2 minutes on each side over high heat, reduce heat to medium low and cook burgers 7 or 8 minutes longer, turning occasionally. Do not press down on burgers as they cook. Transfer burgers to a plate and let them rest 5 minutes before serving.
Chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise. Season with salt and pepper, to your taste.
Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise. As you bite into the burgers, you will find a smoky, cheesy surprise at the center.

StillJulie's Homemade Italian Concoction
Browned a pound of hamburger, sprinkled in some Italian seasoning, added two cups of water, 1.5 cups of uncooked rotini, simmered that til the noodles were cooked, added one can of tomato paste, and one can of Italian seasoned diced tomatoes. We'll sprinkle mozzarella and/or Parmesan cheese on top.
I also stirred in some pepperoni.

Mom's Swiss Steak:
Use 1/2-3/4 pound of tenderized round steak per person. Cut into approximately 3" x 5" pieces. Coat both sides with flour. Brown both sides in pan with cooking oil on medium high heat. Add enough water to cover. Put in 1/3 pound of carrots per person. Add sliced onions if desired. Turn temperature down to medium low and simmer for 2-3 hours, til carrots are tender and meat is cooked.

Asian Beef and Noodle Fast bowl
Beef and Noodle Bowl
1# cube steak floured and salt and peppered (I use pan-searing flour from Wegmans-a local grocery store, it has white pepper and sea salt and certain kinds of flour in it)
3/4 pound angel hair pasta (uncooked)
3 c. broccoli florets
1/2 c onion, sliced pole to pole
3 med carrots, peeled and sliced (I left this out no one here likes cooked carrots but me and I had none, so oh well!)
2 tsp oil (I did no oil in a nonstick pan)
1/2c zest Italian dressing
1/2 c teriyaki grilling sauce by McCormack...this is soo good!)
1tsp ground ginger rehydrated in 2 tsp water
3 cloves *sliced* garlic
Cook pasta accord to package, in the last two min, add broccoli and onion. Drain pasta mixture.
Meanwhile, heat oil in large nonstick skillet, add meat and brown, cooking on both sides. Take meat out. Let set while you make sauce: dressings, garlic and ginger and cook until sauce thickens, stirring with whisk, about 1 -2 minutes.
Toss with pasta and additional soy sauce if it isn't salty enough for ya!

Ground turkey recipes by Dawn
Here are a couple of recipes I use frequently that call for ground turkey specifically. The kids love them both!
TURKEY MEATLOAF 2 pounds lean ground turkey
1 cup water
1 package (6-oz.) stuffing mix (I use cornbread or sage)
2 eggs, beaten
1/2 cup barbecue sauce, divided
Preheat oven to 375°F.
In a large bowl mix meat, water, stuffing, eggs and half of barbecue sauce. Shape into an oval loaf in a 13x9x2-inch baking dish; top with remaining barbecue sauce.
Bake until center is no longer pink, about 1 hour.
TACO STEW 2 cups chicken broth
1 pound ground turkey, cooked and crumbled
1 can (15.25-oz.) corn, drained
1 can (15-oz.) black beans, drained
1 1/2 cups Salsa
1 cup chopped onion (I omit this because of kids)
1 can (4-oz.) Diced Green Chilies, drained
1 tablespoon finely chopped cilantro
1 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon crushed oregano
1 cup tortilla chips, broken into pieces
COMBINE chicken broth, turkey, corn, black beans, salsa, onion, chilies, cilantro, cumin, chili powder and oregano in medium saucepan. Bring to a boil.
Reduce heat to medium; cook for 15 to 20 minutes. Season with salt and ground black pepper. Garnish with tortilla chips. Add sour cream if kids say its too spicy.
Serving Size: 4

one pound of ground beef or turkey 2 eggs 1/2 cup of oatmeal or bread crumbs 1 tsp. salt/pepper 1small onion or dash of onion salt 1-tsp wocheshire sauce mix together, roll into balls and bake in 425 degree oven for 20-25 minutes.. top with 1/2cup ketchup, 1/4cup brown sugar-mix together...add more or less to your families liking
Very good with mashed potatoes or rice

Baked Bean Casserole - BugzNBallet
1 can buttermilk biscuits, each cut in half 1 lb ground beef 1 can pork and beans 3/4 cup regular barbecue sauce 1 1/2 cups grated cheddar cheese 2 tbsps brown sugar onion powder or chopped onion to taste
Preheat oven to 350 degrees. Brown ground beef and drain. Add in barbecue sauce and brown sugar and onion or onion powder and pork and beans. Mix over medium heat. Pour mixture into a round casserole dish. Top with biscuits arranged in a circle around the edge and into the center laid on their sides (fan like). Top with grated cheese and bake for thirty min at 350 or until a little brown on top.
