EAZY OATMEAL CHOCOLATE CHIP BAR COOKIES (by 1joyfulbelle) Printed from COOKS.COM
1 1/4 c. all-purpose flour 1 c. brown sugar 1/2 tsp. soda 1/2 tsp. salt 1/2 c. butter, softened 1 tsp. vanilla 1 egg 1 c. quick oats 1/2 c. peanut butter 1/2 c. chocolate chips
Combine all ingredients except oats and chocolate chips. Beat until well blended. Stir in oatmeal and chips. Press into greased 9 x 13 inch pan. Bake at 350 degrees for 15 to 20 minutes. The edges should be golden but the center should be soft. Cut into 2 inch squares. __________________ Betty

Peanut Butter Bars (by 1joyfulbelle) Mix 1 cup peanut butter with 2/3 cup butter, softened, until well-blended. Mix in 1 tsp of vanilla. Beat in two cups of brown sugar until light and fluffy. Beat in 3 eggs, one at a time. Stir in 1 cup flour and 1/2 teaspoon salt. When well blended, spread batter in well-greased 9 x 13 pan. Bake at 325 degrees for 35 minutes or until center springs up when lightly touched.
Cool slightly. Mix 3/4 cup powdered sugar with 2 teaspoons of water (adjust water until the consistency is like a glaze). Drizzle over slightly cooled bars. Melt 1/4 cup semisweet chocolate chips with 1 teaspoon shortening. I do this in the microwave for a couple minutes, stirring at intervals. Once that is mixed and melted well, drizzle that over the bars as well. This makes a really pretty top for the bars. Cool completely before cutting into bars. Makes 36 bars. __________________ Betty

Ranger Cookies (by 1joyfulbelle)
1 cup shortening 1 teaspoon salt 1 cup white sugar 1 teaspoon baking powder 1 cup brown sugar 1 cup oatmeal 2 eggs 1 cup coconut 1 teaspoon vanilla 2 cups Rice Krispies 2 cups flour
Cream shortening with brown and white sugar, add eggs, and vanilla and cream well. Sift flour with soda, salt, and baking powder. Combine oatmeal, Rice Krispies, and coconut. Fold dry ingredients into creamed mixture. Mix well. Drop by teaspoonsful on cookie sheet. Do not overbake. 350 degrees for 10 minutes.

I got this recipe from our local health food store years ago
2 c old fashion oats lots of cinnamon if you like ( i just pour it in) 1 tsp vanilla 1/3 c butter 3 mashed bananas 1 c dates, raisins or choc chips ( use less if choc chips, i just drop a few in each cookie) 1 c. chopped almonds or walnuts (optional)
stir oatmeal, cinnamon,raisins or dates or chocolate chips, then butter. add bananas and vanilla. stir in nuts. let dough set for 15 min 350 degrees for 20 min
This has no flour in it, and the oatmeal is great for fiber. my girls like it without the chocolate chips, just dates. but for my chocolate fix i put in the chocolate chips.

Coconut Chocolate Chip cookies.... (by cshoremom) These are heavenly, easy to make, and so yummy! they taste like Almond Joy's WITHOUT the almonds....
Ingredients:
1 2/3 c. shredded coconut 1 can sweetened condensed milk 1/2 c. flour 1 c. Nestle semi-sweet chocolate chips dash salt
Mix all ingredients well
drop by teaspoonful onto greased cookie sheet

Monster Cookies (by cnnc)
12 eggs 2lbs brown sugar 4lbs sugar 1 Tbsp. vanilla 8 tsp. soda 1lb margarine 3lbs peanut butter (I usually use 3 of the 17.2oz jars, the extra PB helps the centers caramelize) 18 cups Quick Oats 1lb Chocolate chips (I only use the 12oz bag, it's plenty!) 1lb M&Ms (even though it's not quite 16oz, I use the "Medium" bag, it's sufficient!)
Mix in order given.
Drop by flattened TBSP onto lightly sprayed cookie sheet
Bake @ 350* for 12-15 minutes. (My oven only takes about 10-11mins, just be careful to not let them get brown around the edges!)
I always make the full-sized recipe, and freeze most of it until we need it for various get-togethers for the holidays. If you spoon the dough into quart sized freezer bags (only about half full, if that) being sure to get all the air out, smoosh it flat and they stack wonderfully in the freezer. Each bag should equal approximately 2 dozen cookies. Sugar Cookie Recipe and Decorator Icing Recipe (by Saralynn) Sugar Cookies These can be drop cookies, refrigerated and rolled out to cut, or baked as a bar cookie. I like them best when they are rolled or dropped, rolled I like them nice and thick! Then top them with the decorator icing. YUM The cookie recipe can easily be doubled. 3/4 C Sugar 1 C Butter Cream butter and sugar together Add 2 eggs and 1 tsp vanilla (real is best) Mix together: 2 C Flour 1 tsp Cream of Tartar 1/2 tsp Baking Soda 1/2 tsp salt Mix dry ingredients in with wet ingredients. Then either chill for 6 hours to roll out and cut, or drop using spoon onto a cookie sheet and bake. Bake at 350 until just starting to brown. Ice and decorate, or before baking sprinkle with colored or white sugar. This is the icing recipe I use to decorate. Decorator Cake Icing Mary K. Meeker 1 1/2 C Crisco (or other shortening) 2 tsp white vanilla (dark is fine) 1/2 to 3/4 C hot water 1/4 tsp. salt 2 lb. powdered sugar food coloring as desired. Put Crisco into bowl, add powdered sugar. Heat water, vanilla and salt together. Pour over Crisco and sugar. Whip with mixer until light and fluffy. Cinnamon Banana Cookies (by Amy F in LA ) 1 1/2 cups all-purpose flour 1/2 tsp baking soda 1 cup white sugar 1/4 tsp ground nutmeg 3/4 tsp ground cinnamon 3/4 sup shortening (I used unsalted butter) 1 egg, beaten 1 tsp salt 1 cup mashed ripe bananas 1 3/4 cups rolled oats 1/2 cup chopped walnuts
Heat oven to 400.
Stir together flour, baking soda, sugar, nutmeg, salt and cinnamon in a large bowl. Add in the shortening and combine well until there are almost no more lumps left. Add in the egg and bananas and combine well. Fold in the oats and walnuts and mix well to incorporate the ingredients.
Drop dough by teaspoonfuls onto ungreased cookie sheets, about 2 inches apart.
Bake for about 10 to 12 min or until the edges have turned brown. When done immediately remove the cookies from the pans and transfer onto the wire racks to cool completely.

Cranberry cream cheese Bars
2 cups all-purpose flour 1 ¼ cups quick-cooking oatmeal ¾ cups packed brown sugar 1 cup (2 sticks) butter, softened to room temperature 12 ounces cream cheese, softened to room temperature ½ cup granulated sugar 2 eggs 2 teaspoons lemon juice 1 teaspoon vanilla extract 1 16-ounce can whole berry cranberry sauce (I use homemade cranberry sauce) 2 teaspoons cornstarch
Preheat oven to 350 degrees. Spray a 13x9-inch baking dish with non-stick cooking spray. In the bowl of a stand mixer, stir together the flour, oatmeal, and brown sugar. Add the softened butter to the mixing bowl and mix on medium speed until the mixture resembles coarse crumbs. Measure out 1 ½ cups of the crumb mixture and set aside in a separate bowl. Pour the remaining crumbs into the prepared baking dish and press evenly into the bottom of the dish. Bake for 15 minutes. While the crust is baking, in the same bowl of the stand mixer, cream the softened cream cheese and sugar together on medium speed until light and fluffy. Add eggs, lemon juice and vanilla extract and mix well. Also while the crust is baking, in a small bowl, combine the cranberry sauce and cornstarch and mix thoroughly. When the crust is done baking, remove from the oven and pour the cream cheese mixture evenly over the crust. Then spoon the cranberry mixture evenly over the cream cheese mixture, spreading gently with the back of a spoon so that it is evenly coated. Then sprinkle the reserved oatmeal crumbs over the top of the cranberry mixture. Bake for 40 or until completely set and very lightly golden brown. Remove from the oven and allow to cool completely on a wire rack. Cover and refrigerate the baking dish for at least 3 hours so that the bars can firm up. Once chilled, cut into bars and serve.
