Dss is currently gluten-free, dairy-free, low carb, no soy Very hard for a 12 yr old this time of year. I am currently making 2 batches of muffins. I can barely pull together 1 meal some nights and 2 is making me crazy. Suggestion? Grin and bear it? It is only until we find out what the problem is and then we will know what we have to eliminate.

I make the main dish something that everyone can eat. Side dishes are usually a veggie. Rice, pasta or potato for the rest of my family.
I'm eliminating grains from my diet and contemplating nightshades. Everyone is gluten free except for my youngest.
I stick to an easy main dish. Chicken breast, pork chop or beef. Simple seasoning. Same thing with the veggie. I go between steaming and roasting. Or serve a raw veggie *platter*. We just recently learned that everyone enjoys daikon radish raw.
I make the following - which I'm not sure of the carb count, but they're gluten free and everyone loves them:
Eggroll in a bowl. Tastes like a chicken eggroll but without the wrapper. (instead of soy sauce use coconut aminos) Philly cheesesteak casserole. (leave out the cheese from your dairy free child portion) Chili Relleno casserole. (again leave out the cheese from your dairy free childs portion.) Pork tenderloin medallions - I serve with carrots. Chicken vesuvio - has potatoes in it but I've been hearing that radishes can be subbed and people don't know the difference. I'll keep you posted! Cafe Rio shredded chicken - my family likes it as a burrito bowl. But I can eat it like it is. Posole - Mexican pork & hominy stew. My family enjoys with tortillas - I don't to keep my carbs lower.
I've yet to try the cauliflower crust pizza, but I hear it's good. Top with sauce & veggies - leave out the cheese or maybe find a dairy/vegan cheese that works.

I think you need to make a list of what he can eat.
I found it overwhelming when we were gluten free vegan, but when I figured out what was ok, I was amazed at all the possibilities.

I make one meal. If I make something like spaghetti I do make reg. noodles and gluten free ones. It is so much cheaper that way. However for many dishes instead of noodles I make rice instead. I love my rice cooker since going gluten free for dh.

We have a dairy intolerant with diabetes here.
Tbh I tend to cook with that in mind - we often use wholewheat products (ds prefers it to white - aged nearly 2yo) and use oil instead of butter, lactofree products instead of milk, etc.
I have limited time so cook one dish for all - those who want different cook themselves!

I go as basic as possible to fulfill the special diet requirements. Very basic meats & side dishes. I do agree that it is more expensive. BUT, with practice and time, it's not as bad as you think. Although, that could depend on your style of eating/cooking etc. We went off gluten and dairy back in May. It did take a hit on the food budget. I cook from scratch almost completely. We have changed our style of eating. The kids don't eat sandwiches on bread anymore. They use lettuce instead. Because we don't at processed foods we don't have to buy a lot of "substitutes" for normal foods. Gluten free snacks/breads/noodles etc ARE much more expensive. They are a treat. Well, not the noodles. We do eat those regularly. But, I do get that it seems/feels very overwhelming. It doesn't sound like going gluten free is something you're interested in for the whole family though (which if we didn't find it so beneficial for our kids we wouldn't either). Like Laney said - we rely heavily on the meats and veggies/fruits and potatoes and rice. It does get tricky to FILL the bellies some days. Lots of chips and salsa!! My kids have told me though that they think we eat better now! ha ha Hang in there. I'm hoping you can get some answers and soon get off this crazy diet.

How about refried beans or black bean hummus with their chips and salsa? Extra protein and fills em up.

I find the potatoes can turn into any grain you want. Want a ham and cheese sandwich? Have it on a baked potato. Want spaghetti and meatballs have a baked potato! Tacos on hash browns is my FAVORITE!
