Can I ask why only 1 carb a day? He plays club soccer and has moved from goalie to forward and really has to increase his speed in order to be competitive. He needs to lose some weight so fruits veggies, lean meats and 1 carb of his choice daily.

well I'm dairy free with other things. I just don't make foods that all connect. like casseroles etc. I make a main dish (pork, beef, chicken, turkey), side of veggies, a side of starch (you can do rice or potatoes)
basically I make almost everything dairy free…I don't use the fake cheese substitutes we just don't have cheesy meals anymore, on a rare occasion I'll bake them a frozen lasagna and have vegan butternut squash ravioli myself.
I'd just try to have foods that don't need to be made together, have things that are put together meals so everyone eats. Like make your own tacos…you can have all the fixings and corn/GF tortillas instead of flour ones. the box pasta barilla makes a decent GF pasta. just cook two pots.
things like muffins/baked goods I'd just buy something pre-made from a health food store bakery as needed when you need them. Otherwise make eggs for breakfast or buy on GF cereals (you know most CHex is GF!) and almond milk in original is great for cereals! (and baking)
