I've been asked to bring a meal to a young family and I do want to participate in ministering to them. One of them is gluten free ...
help! what do I need to know / do differently? I'll get more info on the specifics of their restrictions when the gal who is organizing calls me to set up which day, but I want to start thinking ahead so I'm not running to the store at the last minute.
How about a pork or turkey roast, a steamed veggie, can I do quinoa pilaf? maybe a green salad, and fruit (as most desserts I usually bake have flour!)
Or maybe taco soup ?

I did one last week that was super simple.
Chicken and rice soup. Keep in mind gluten free broth and no spice blends.
Cheese and gluten free crackers (we love the wheat thin rice thins in salt and pepper).
I made gf cookies, but maybe a simple ice cream or fruit salad.

Rice, meats, veggies, potatoes, fruit. Roasts are good - gravy can be done with cornstarch instead of four. I agree, no spice packets and check labels. Or do a spaghetti sauce and take gluten free noodles that they can cook when they want it.

It would be easier to make a gluten free flourless brownie. (Cookies take a blend of gluten free flours) flourless browniesYou do have to be careful about cross-contamination if they have an allergy to gluten or are Celiac. Using your pans that you bake non-gf items in could spark a reaction. Just an FYI.

Because I have a couple friends who are gf I keep it around. But if pb isn't an issue, the three ingredient pb cookies are awesome. One cup sugar, one cup peanut butter, one egg. Mix and bake. I use parchment when I make anything for them as well... Just in case.

If I bake, I'll use one of the disposable pans and not worry about getting my pan back or inadvertently sending gluten. I have and use parchment, too. So, how does the cross-contamination thing work with other cookware ? I use the same pot for boiling pasta and veggies here at home and probably have used numerous ingredients in the crockpot that I'd do a roast in ? The three-ingredient pb cookies - how many does that recipe make? could I bake that as bars?

I'm guessing that if the mom is accepting meals it's not life or death (my friend will not accept them except for those who go through it step by step with her). The recipe makes about 12 cookies maybe a few more. I would not make them into bars as they are more fudge like in texture and I don't think bars would firm up in the middle.
