3 c sugar 1 lb. butter, softened 6 eggs (room temp) 4 c. flour 3/4 c. milk 1 tsp almond flavoring 1 tsp vanilla
Cream together the butter and sugar. Add eggs one at a time until well mixed.
Beginning with flour, alternate it and the milk in small amounts until well mixed.
Stir in almond flavoring and vanilla.
Place batter in a greased tube pan and bake at 300 degrees for 1 hour 40 minutes.
My notes- I have used lemon in place of the almond. It is good, but the almond gives it a great flavor. I cook mine in a bundt pan, and yes, it really does take that long to cook! It is great served with fresh berries and whipped cream or just on its own! Enjoy!

crazy banana cake (by Januinely~me) 1 1/2 cups flour (I use a mixture of all purpose and whole wheat pastry flour ) 1 tsp baking powder 1/4 tsp baking soda 1/2 cup sugar 1/8 tsp salt 2/3 cups ripe mashed banana 1/3 cup buttermilk 1/3 cup oil 2 large eggs 1/2 cup chopped pecans or walnuts (optional) 1/2 cup choc chips (optional)
Combine dry ingredients in a bowl. Combine wet ingredients in another bowl. Mix together well and pour into a greased square pan. Bake in a preheated 350* oven for 25- 30 mins or until done.
This recipe doubles well.

Cakes & Pies (by Januinely~me) 3 cups all purpose flour (I use half all purpose, half organic whole wheat pastry flour) 2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 cup sugar 1 1/3 cups ripe mashed banana 2/3 cups buttermilk 4 large eggs 2/3 cups oil (I use olive) 2/3 cups pecans or walnuts, chopped (optional) 2/3 cups chocolate chips (optional)
In a large bowl combine: flour, baking powder, baking soda, salt and sugar. In another bowl combine: mashed banana, buttermilk, eggs and oil. Pour the banana mixture into the flour mixture and stir until combined. Add nuts and/or choc chips, if desired. Pour batter into a greased 9x13" pan and bake for 30-35 minutes or until done.
Oven temp: 350*

Starlight Cake (by Januinely~me)
2 1/4 cups all purpose flour 1 1/2 cups white sugar 1/2 butter or marg softened (I would imagine you could use oil instead of the butter or marg, if you wanted to.) 1 1/4 cups milk 3 1/2 tsp baking powder 1 tsp salt 1 tsp vanilla 3 large eggs
Heat oven to 350*. Grease & lightly flour bottom & sides of a 13X9" rectangular pan or 2 -- 9" round pans. In a large bowl beat all ingredients together on low speed for 30 seconds, scraping bowl constantly. Beat on high for 3 minutes, scraping bowl occasionally. Pour into pan/s. Bake rectangle 35-40 mins (round 25-30 mins.) , or until cake springs back when lighty touched. Cool on wire racks. (If you have used rounds pans remove cakes after 10 mins and let them finish cooling on the racks.)

vanilla buttercream frosting (by Januinely~me) 3 cups powdered sugar 1/3 cup butter or marg -- softened 1 1/2 tsp vanilla 1 - 2 TBSP milk
Mix powdered sugar & butter (or marg) in a medium bowl on low speed. Stir in vanilla and 1 TBSP of milk. Gradually beat in just enough of the remaining milk to make frosting smooth & spreadable. If frosting is too thick, add more milk a few drops at a time. If frosting becomes to thin, add small amounts of icing sugar.

Mix powdered sugar & butter (or marg) in a medium bowl on low speed. Stir in vanilla and chocolate. Gradually beat in just enough milk to make frosting smooth & spreadable. If frosting is too thick, add more milk a few drops at a time. If frosting becomes to thin, add small amounts of icing sugar.
