Hummus
Hummus - I use this as a spread on sandwiches. I also use it as a tortilla chip dip.
1/4 cup Tahini (I had to go to local food co-op to purchase) 1 tsp. cumin 1/2 tsp. salt 2 large garlic cloves, pressed 3 Tbsp. lemon juice 3 Tbsp. hot water 19-oz can garbanzo beans, drained (also known as chickpeas)
In small bowl, combine Tahini, cumin, salt, and garlic - while stirring, slowly pour in lemon juice, then hot water. Puree garbanzo beans in food processor. Add Tahini mixture and process well.
Optional: Could garnish with parsley Could add 2 tsp. honey
Yield: 1 1/2 cups

Deviled Eggs with Hass Avocado
12 eggs ½ cup mayonnaise 4 tsp. prepared mustard ½ tsp. salt ¼ tsp. pepper ½ med. onion finely diced 1 stalk celery finely diced 1 large Hass Avocado
Hard boil and cool eggs. Remove shells, slice in half and remove yolk. Set aside white to be filled. Steam onions and celery until tender. Place steamed onions and celery into food processor (or blender) and puree. Add yolks, mayo, mustard, salt, pepper, and avocado and blend well. Fill egg whites and sprinkle with Paprika (if desired). I found this on Food Network, but any Avocado will do. I also did not steam my celery or onion. It diced pretty small in the food processor.
If you have never had avocado, you may not like the taste of these.

Chickpea Stuffed Shells
18 uncooked Jumbo pasta shells 15 oz. can chickpeas or garbanzo beans, rinsed and drained 2 egg whites 15 oz. reduced fat ricotta cheese 1/2 c. minced fresh parsley 1/3 c. grated parmesan cheese 1 small onion, quartered 1 garlic clove, minced 1 jar spaghetti sauce 1 1/2 c. shredded mozzarella cheese
Cook pasta shells according to package. Meanwhile, place beans and egg whites in a food processor; cover and process until smooth. Add ricotta, parsley, pamesan, onion, and garlic; cover and process until well blended. Pour 1 1/4 c. spaghetti sauce into ungreased 9 x 13 in. pan. Set aside. Drain pasta shells; stuff with chickpea mixture. Place over suace. Drizzle with remaining sauce. Bake, uncovered, at 350° for 30 minutes. Sprinkle with mozzarella. Bake 5-10 min. longer or until cheese is melted.
Note: for our family, I use the entire box of shells and 2 jars of sauce. This is delicious with a homemade garlic bread and veggie. My vegetarian sister gave me this recipe. Yum!
