I usually cheat and buy the frozen veggie fried rice at TJ's... didn't have time to stop there yesterday. Was hoping / planning on fried rice and spring rolls (from the freezer) for dinner tonight. In the past, people have said that fried rice is "easy" ... anyone want to point me in the right direction? I guess I needed a little extra :poke: to give it a try. Do you have a tried and true recipe?

Thanks! I also watched a Rachel R demo online and I think I can do this I pre-cooked the rice and am cooling it in the fridge until dinner prep time.

i use white minute rice.
i make a cup per person - or 1-1/2 if it's highschool or guy's in their 20's
as the rice boils in water.
in another pan i scramble eggs --1 egg per 2 cups of rice (or even more eggs)
sometimes before i add the rice i saute some green onions in butter then add the white rice.
i pour on the garlic powder, and soy sauce, and pan fry till it is all mixed together and ready. a few minutes

whole fam loved it - even my one who adamantly tells me "I don't like rice" - I put his fave two veggies in and he loves eggs, he even asked for seconds! so it was a great hit all around
