it feels like we're in a breakfast rut... We don't really have time (don't wake up early enough!) to make fresh-off-the-griddle pancakes or waffles in the am and be off to school on time...I suppose I could pre-make, does anyone have sucess with making ahead and re-warming ?? here's what we already have in our rotation: cold cereal oatmeal over-easy egg with cheese and ham slice on english muffin (think mcmuffin) scrambled egg with turkey bacon and cheese wrapped in tortilla eggs and english muffins/toast one uses bagels with cream cheese as lunch, so we typically don't do that as breakfast. one doesn't care for fruit smoothies, so then I 'd have to make two things for breakfast... I try to keep it simple as I'm not really a morning gal until about o'clock thanks!

WOW…… You already have everything I'd suggest. I am also in a rut. My teens rarely eat on school mornings, and they NEED to, yet everything I suggest or offer to make, they don't want. So, hopefully other Mom's will have some good ideas!… I will be watching this thread!
I have to say I LOVE YOUR AVATAR! You are so pretty!!!! Great picture! I love "seeing" everyones photos!!

We do waffles for dinner a couple times a month. I will sometimes make a double batch. Lay them flat on a wax paper covered baking sheet and put in the freezer. Once frozen, transfer waffles to a freezer bag. Pop in the toaster when you want breakfast. So fast and easy.
I make scrambled eggs in the microwave for a egg, cheese, and toast sandwich. Just be sure to soak the bowl you used as it can be hard to clean.
Peanut butter toast sandwiches are big here.

Does your family like boiled eggs? My kids consider those a treat unless I make them too often. LOL.
I think probably making things ahead, like muffins or waffles or pancakes, would be a great idea. You could make muffins the evening before and then just have them for breakfast. Some muffins are super sugary, but there's a lot of good recipes that are more healthful.
I've pretty much given up on being creative. We usually have scrambled eggs and then the kids can choose oatmeal, cereal, toast, or whatever.

They freeze really well. I make DD special muffins right now that work with her diet. I take one out of the freezer, pop in the microwave for 25 seconds, and it tastes fresh.

You've got everything I'd suggest. You could make quiche the night before (I do a crustless one) and then serve wedges of it in the morning.

I'll try the fast freeze method and see if that goes over better than my "toss them in a ziploc in the fridge and re-heat later in the week" method ...In fact, I'm almost inspired to go make a batch right now and try it for tomorrow and I hadn't thought of muffins, thanks! erin, we do put boiled eggs in the lunches about once a week for a protein snack, however, I have one that only eats the whites of the boiled eggs (just found that out on Thursday when there was crumbley yellow stuff all over the inside of the lunchbag...apparently the lid of the snack cup mysteriously came off

Haven't read all the replies. My suggestions are: muffins or banana bread with cheese and fruit. fruit smoothies Pre-made pancakes -- they reheat great in the toaster Quiche

My kids wouldn't eat if I didn't make them. They don't have a choice... but some of them still slip out without anything once in a while. My oldest usually wants a smoothie or eggs. My second one usually wants toast and my daughter usually wants a glass of chocolate milk. I make her eat fruit with it. She also sometimes has cereal (she's sensitive to gluten so she'd love a toast but it wouldn't love her). Josh has applesauce and goldfish. Every morning. lol.
I do make them each something different. I just have always allowed them to have their choice on a school morning. I'm in the kitchen making lunches anyway so why not fry and egg or make a toast. They are capable of doing their own... and sometimes do... but then they are in my way, lol.
I have never had success with reheating pancakes, but waffles are good in the toaster. When I make homemade waffles I always make extra and just put them in the freezer. What about muffins? You could make them up ahead of time and freeze them... then just grab and go (microwave or take out a little before you want to eat). I usually have gluten free muffins available for my daughter.
They also love homemade granola.
French toast are easy.

I have. Had success with freezing waffles as Julie said. I saw a good recipe from Betty Crocker yesterday. It used eggs, has browns, bacon and cheese wrapped in an wonton wrapper. That looked good. You could still did smoothie packets for the ones that will eat them. I have also done crescent rolls with sausage and cheese in them. Or you could use ham or bacon in them. I have also but eggs in them but that gets messy. I've made a sausage gravy and biscuit casserole before. I think that was an overnight thing and just needed baked in the morning. I also have an overnight French toast casserole that just needs baked in the morning.

You could make a big batch of muffin batter and keep it in the fridge and scoop it out every morning to make fresh muffins. I've done that with the raisin bran muffins, and pumpkin muffins before. You can use less sugar and add other things to bulk up the health factor. (zucchini, peanut butter, nuts, shredded carrots, etc.) My kids love muffins. Another thing is those nest things where you put hash browns in muffin cups and then an egg on top of that and cook them. I hate eggs, so I haven't ever made them, but I've been wanting to make them for my kids. You are all so creative and way more energetic than me!
Here it's cereal or toast/butter/jam or marmalade or marmite. There's the toaster, you know how it works (kinda thing)
Dd tends to buy a sausage/bacon wrap at school. Ds is happy with raisins, shreddies, etc.
I wait til at work and drunk several cups of tea!
