Taffy Apple Salad by mammaof2boys2000 A dreamy mixture of apples, pineapple and marshmallows makes this salad a cool, pleasing side dish or dessert.
Prep time: 20 minutes
1 can (8 ounces) pineapple tidbits in juice
2 medium red apples, cored and diced
2 medium Granny Smith apples, cored and diced
1/2 cup dry roasted peanuts, coarsely chopped
4 ounces cream cheese, softened
1 cup thawed frozen whipped topping
1 cup miniature marshmallows
Additional chopped dry roasted peanuts (optional)
1. Drain pineapple in small Colander, reserving juice. Cut apples into wedges using Apple Wedger; dice with Chef’s Knife. Coarsely chop peanuts using Food Chopper.
2. Place cream cheese in Classic Batter Bowl. Gradually whisk in reserved pineapple juice until smooth. Stir in whipped topping; mix until blended.
3. Add pineapple, apples, peanuts and marshmallows to cream cheese mixture; mix gently. Cover and refrigerate until ready to serve.
4. To serve, spoon into serving bowl. Sprinkle with additional chopped peanuts, if desired.
Yield: 12 servings

three3boys' Applesauce Wash and core your apples (you can peel them if you prefer, but I don't)
Place apples in a big pan with just enough water to cover the bottom of the pan and keep the apples from burning. Sprinkle with cinnamon (I use the Pampered chef stuff cause it's yummy!) and add about 6-8 cinnamon sticks. Simmer for several hours until apples begin to sauce. If needed, mash with a potato masher and remove the cinnamon sticks. Once the sauce is to desired consistency (the longer you cook it the smoother it will get) add sugar to taste. I use half sugar half artificial sweetener.
Notes from 5allmine: I cut the apples with a pampered chef peeler slicer, thing. You can also put it in the crockpot. I think I also put brown sugar in mine. If you want you can use cider or apple juice instead of water.

Caramel Apple Jam (by Januinely~me)
~6 cups apples --- peeled, then diced, or shredded (I shredded mine in the food processor) ~1/2 cup water ~1/2 TBSP butter
Cook in large pot until soft.
Add 1 pkg pectin & bring to full boil, then add:
~2 cups brown sugar ~2 cups white sugar 1/2 tsp cinnamon 1/4 tsp nutmeg
Return to boil and boil 1 minute.
Put into jars and process 10 minutes in a hot water bath.

Carmel Dip for Apples (various recipes)
by EllieFunt Caramel dip for apples I had a recipe for caramel dip that didn't call for a jar of caramel. It seems that everything I google calls for a jar of it. I remember it being creamy, using brown sugar and peanuts. Helpful, huh?
Does anyone have a good recipe? I have quite a few apples that would be really yummy with some dip.

The one I have made uses carmels, a stick of butter, and sweetened condensed milk. (Decadent )

by Becky I think I have one somewhere that calls for sour cream, cream cheese, brown sugar, and vanilla. I'll have to look and try to find it.

I like to mix cream cheese and brown sugar with a touch of vanilla. Warm to room temperature, add brown sugar to taste, about 1/2 a tsp of vanilla and whip until creamy. It's delicious and so fast.

You can take a can of evaporated milk (still in the can - don't open it). Boil it in a pan of water for a while. Take it out, open it up and voila caramel!!! __________________ ~*~Rebecca~*~
