Trying my hand at gluten free cookies for our live nativity this weekend. I also got a great deal on lemons so I'm making lemon curd and then later chopping a bunch of garlic to put in my fridge. Works so much easier than chopping as I need it and it tastes better than the jars you buy in the store.
Anyone else started holiday baking?

Sounds yummy! I don't really do any holiday baking. I did do some freezer meals this morning though.

How did your gluten free cookies turn out? I've done a lot already and all of it has been eaten. So far I've made shortbread cookies, nieman Marcus cookies and spicy frostbite cookies. I was really tempted to make peanut butter cup fudge today but I think I'll wait til closer to Christmas for that.

A little on the sett side but I think I added too much of the last kind of flour. But with coffee they will be tasty.

Would love your recipe for the GF cookies. I'm always looking for something 'tried & true' to make for my family.

We're gluten free here. A friend and I make our own flour though and we use it cup for cup in all of our recipes and 95% of the time you can't even tell it's not regular flour. We use a combination of sweet white rice flour, potato starch, sorghum and millet. We find making it ourselves is far more economical than buying flour in the stores. We have it down to about $1 a pound for flour. I do add xantham gum to my baking for texture.

So far we've only made buckeyes. Plan to do more in the next couple of weeks and call it science class.
