Those are a great idea!!!
Another pretty party sandwich is to layer wheat/white/wheat bread (or vice versa) with something like egg salad, chicken salad, ham salad, etc. So you have a tall sandwich.
Then cut the crusts off (those are always for me ). Cut it in half (rectangles). Then starting at one short end, cut small sandwiches off. Then when they're on the tray, they are "striped". VERY easy and quite pretty.
You can do open-faced sandwiches with a small round cookie cutter (and then trim the rest into triangles. Use pimento, egg/ham/etc salad, and decorate with a tiny bit of lettuce, parsley, olive or whatever.

bruschetta (by Lucy) I have had this served many ways at restrauants, but this one compares to a small pizza place near my house. (my kids say i have perfected this recipe)
loaf of french bread jar of basil pesto tomato, diced small garlic powder pecans, crumbled into little bits feta cheese
slice the french bread bout 1" thick, and lay on side on cookie sheet.
stir the pesto, using a spoon, dip and spread some pesto on each piece of bread
take a spoonful of tomato, and place it on the bread
sprinkle with garlic powder
drop pecans on top of the tomato, then top with crumbled feta cheese
(you have to work at kinda pushing the food on top of the bread so it won't all fall on the cookie sheet)
bake for a few minutes at 350 You just need to wait till it is hot and the cheese begins to melt. enjoy !
