Easy, filling appetizer. . .hmmm. What about a cool veggie pizza? That's not terribly cheap , 2 packages crescent rolls, 1 package cream cheese, dill, veggies (2 Cups mixed chopped), and cheddar cheese.
Or, The hot artichoke dip from PC, the recipe can be googled. Serve with a baguette.
That's all I can think of at the moment. I'm hungry but for supper not snacks. Oh, chips and salsa is one of my favorites!! Or bruchetta. Bruchetta's super simple, do you have ripe tomatoes?

Strawholder's Pizza Bites by Januinely~me makes 48 bites divided into 3 trays, prep 20 min, cook time 20 min, adapted from Recipezaar
Basic Pizza Dough makes 1 recipe pizza dough, prep 10 min, rise time 1 hour 1 pkg active dry yeast (or 2 1/4 tsp loose yeast) 1 cup warm water 1 tbsp olive oil 1 tsp salt 2 3/4 cup flour Combine yeast and warm water, stir to dissolve. Add oil, salt, and flour. Stir to combine. Once dough starts to come together, turn out onto a floured counter and knead to thoroughly combine-until dough is smooth and elastic. If it is uncooperative let it rest for a few minutes and come back to it. Place dough ball in a greased bowl and cover loosely. Allow dough to rise until doubled, approximately an hour.
2 recipes pizza dough (or 2 cans refrigerated pizza dough) 8 oz block mozzarella cheese 4 oz thin sliced pepperoni 2 tsp Italian seasoning (combine oregano, basil, parsley, and garlic) 1/4 cup olive oil 3 tbsp grated Parmesan cheese pizza or marinara sauce Prepare pizza dough and roughly chop pepperoni. Cut block of mozzarella into 48 cubes. If you are going to bake some (or all!) right away preheat oven to 400°F. Grease 3 pie pans. If using refrigerated pizza dough: roll one dough out into a large rectangle and cut into 24 pieces. Repeat with 2nd pizza dough. If using homemade dough just pinch off walnut sized pieces as you go. In each dough piece place a couple pieces of chopped pepperoni and a cube of cheese. Seal dough around meat and cheese and place seam side down in pie pan. Repeat, placing approximately 16 dough balls in each pie plate. Once assembled, combine oil and spices and brush over the dough. Sprinkle with Parmesan cheese. Now you can cover with plastic wrap and refrigerate or freeze or you can bake right away. When ready to bake: bake at 400°F for 16-20 min. Serve with warm pizza or marinara sauce.

Deviled Eggs by Nannynise
Here is my mom's so my deviled egg recipe.
12 hard boiled eggs
Peal and then cut in 2.
Put yolks in a bowl (we use our kitchen aid mixer if we are doing more than a dozen)
we add 1/4 teaspoon salt 1/8 teaspoon pepper 1 Tablespoon sweet pickle juice 1 Tablespoon mustard 1 Tablespoon sugar 1/3 cup mayo( we use miracle whip) - more if needed
Mix that all in with the yolks, then when mixed well we fill the whites back up.
So no we don't put relish of any kind in our deviled eggs.

Feta Stuffed Mushrooms (by DDofEve) I have been making these since I was 15 years old and in home economics class. They are neither healthy nor low fat. Jus' sayin'.
1 box GIANT button mushrooms or baby bella mushrooms (wash and de-stem them, but SAVE the stems for filling!) 1 small onion or shallot 3 cloves garlic (or 3 tsp minced garlic) salt, pepper Mince and fry up the mushroom stems and veggies
In another pan: Make a white sauce 3 T. flour 6 T. butter Add: 3/4 c. Parmesan cheese and stir until melted and no salt crystals are left (taste it to see that its nice and smooth) salt, pepper to taste
2 cups mozzarella cheese divided evenly 1 smallish(I always buy a certain package, maybe its 4-8 oz or so) pkg feta cheese. It can be ANY flavor added you want. Sun dried tomato is yummy, but plain is ok too!
Combine the white sauce and 1 cup mozarella cheese until cheese is melted (it will never melt completely melt) and then add mushrooms and veggie mixture in.
Fill the clean mushroom caps with mixture and place into a baking dish, I used to try to do an 9x9 pan, but whatever you have is fine, they can overlap) and pour extra over the rest of mushrooms. Top with extra moz cheese. Bake at 375 for 30-40 minutes, or until cheese is melty, bubbly and mushrooms test soft.
***Now I put this here from memory. I do add fresh parsley from the freezer (garden raised) if i have it.

Ingredients Tortillas (1 pack w/ 8 tortillas) 1 lb turkey, sliced thin 5 oz Swiss cheese, sliced thin 8 tbsp cream cheese 3 leaves romaine lettuce 1 plum tomato, sliced thin cranberry sauce (optional)
Directions Warm the tortillas in the microwave for about 10 seconds. Lay them out and spread a thin layer of cream cheese, about 1 tablespoon per shell. Starting at the bottom, and moving each layer slightly upward working towards the center, start layering your ingredients in the following order.
Swiss cheese Tomato Lettuce Turkey A strip of cranberry sauce, which should land in the middle of the wrap Starting at the bottom, slowly roll the wrap tightly until smooth over end. Put in the fridge about 10 minutes so the cream cheese hardens to hold it together. Slice into 1 inch sections, or eat whole by folding the ends in slightly when you roll it.
Just change the cheese and meat varieties to make different combos. Cream cheese helps keep a lot of wraps together. Try mixing salsa in your cream cheese

I've made these before. If you can get some help and an "assembly line" going in your kitchen, they don't take that long.
I buy the large size flour tortillas. I also buy flavored cream cheese as the "glue" if you will. You can vary your meat choices and the other items you put on the roll ups.
I have done ranch flavor cream cheese with turkey, I buy shredded lettuce, add some shredded cheddar cheese and finely chopped tomatoes. Don't use too much tomato or they will get soggy.
I have used plain cream cheese with ham and then line up sweet gherkin pickles down the middle and roll up. Sounds weird, but it was good.
Roast beef is also good with lettuce and provolone or mozzarella cheese and a flavored cream cheese.
If your grocery has those rotisserie chickens you could buy one of those and shred the chicken and make a chicken salad (don't make it too "wet" with mayonnaise), celery for crunch, some shredded carrot for color.
The roll ups tend to be gobbled up because they are easy to eat.

You can buy the colored flavored wraps too. We did the green ones (spinach, I think?) for ds2 class party in 4th grade. They looked very festive.
I mixed a little ranch dressing with the cream cheese to thin it just a bit and had flavor, bought ham and turkey from the deli and asked the them to slice it very thin, same with the cheese. It makes it easier to roll, secure each section with a toothpick, and cut.
Mmm... making me hungry now too.
