Black Bean Salsa by sandiok
1 can (16 oz.) black beans 1 can (12 oz.) shoepeg (white) corn 1/4 C. cilantro 1/2 C. chopped green pepper 1 medium purple onion, chopped 3-4 medium tomatoes, chopped 1 jalapeno pepper, chopped (discard seeds for mild, leave seeds for hot) 1 T. canola oil Juice of one large lime 1 tsp. salt 1 tsp. garlic powder
Drain and rinse black beans and shoepeg corn. Place in a large mixing bowl. Add cilantro, green pepper, purple onion, tomatoes and jalapeno pepper. Blend well. Drizzle the canola oil and lime juice over the top of mixture. Add salt and garlic powder and mix well. Cover and refrigerate for 2-3 hours. Serve with baked tortilla chips

Salad by Jode My sister shared this one with me and we love it! -------------------------------------------------------------------------------- It's easy too! Take a bag of shredded coleslaw mix (with carrots), add 6 green onions (sliced), one cup frozen peas (mix frozen), one half/one cup peanuts or cashews and stir in creamy poppyseed salad dressing. You can alter the proportions depending on our likes/dislikes. It's easy and everyone I've served it to loves it. I just bought some broccoli slaw to try it with. Anyway, thought I'd pass that one along. Jode

Potluck Picnic Ideas by Mrs D -------------------------------------------------------------------------------- For dishes that need to stay cold, I like to put my serving bowl in a considerably larger bowl, fill the larger bowl w/ water (so the serving bowl is surrounded by water) & pop them in the freezer over night. Just b/4 we head out I put the refrigerated side dish in the frozen serving bowl & cover all w/ foil. Just be sure not to fill the bowl to the rim as water expands when it freezes.
I also like to make a watermelon basket & fill it w/ frozen fruit. I make it just enough ahead of time so that the fruit is just thawed enough not to break a tooth, but still very chilly. It's a refreshing treat on these bone-melting hot days. By His Grace~ Becky

Sloppy Joes by mrsgehrke
1 lb. ground beef 1 medium onion, chopped 1 1/2 TBSP. flour 1 cup Coca Cola 2/3 cup ketchup 2 TBSP.. vinegar 1 TBSP. worchestershire sauce 3 level tsp. dry mustard Brown beef and onion in large skillet; drain fat. stir in remaining ingredients as listed. Mix well. Cover and simmer 30 minutes. Serve on buns. Recipe from salsarose

Baked Beans by mrsgehrke
2 (16 oz.) cans pork and beans 2 T. ketchup 3 slices bacon, cut into small pieces 2 T. brown sugar 1 T. minced onion 1 T. Worcestershire sauce 1 tsp. liquid smoke 2 tsp. mustard
Combine all ingredients in casserole dish. Bake, uncovered, 1 hour at 350 degrees OR microwave on high, covered, for 13-15 minutes. Recipe from spanishteacher

Taco Salad by Mom2two ------------------------------------------------------------------------------- I usually have to double this recipe at potlucks. It goes fast.
1 head of lettuce 2 cans of Kidney beans (drained and rinsed) 2 tomatoes, chopped shredded chedder cheese ( I don't measure, maybe 2-3 cups) bottle of 3 cheese ranch (I pour enough to coat all the lettuce) Crushed Doritos (don't measure that either.. I put alot!)
Tear up the lettuce and put in bowl. Add the next 3 ingredients. Mix in the Doritos and dressing right before serving. When sitting too long the Doritos will get soggy.
