Guacamole by Flautista
2-3 very ripe avocadoes, mashed 1 roma tomato, chopped 1 green onion, chopped 1 clove garlic, minced 1/2 jalapeño, seeded and chopped (optional) salt, lemon pepper and ground cumin to taste juice of half of a lime
Mix all ingredients together. Chill for an hour to allow flavors to blend. Excellent served with tortilla chips or as a topping for tacos and other Mexican dishes. __________________ Love and blessings, Linda (formerly Linderlou)

Better Butter by Januinely~me I haven't tried this recipe myself yet, but I plan to.
Makes about 3 cups
1 lb butter, salted or unsalted, room temperature 1 cup olive oil, extra light Using a hand mixer or stand mixer with a whisk attachment, whip the butter on high speed until smooth and fluffy. With mixer running, slowly pour in oil. Continue mixing on high speed until thoroughly combined. You may need to scrape down the sides and mix again to get a totally smooth combination. The mixture should resemble cake batter: liquid, but thick and fluffy. Spoon into some kind of sealable rigid container and refrigerate.
