Vegetable Lasagna by SandKsMama --------------------------------------------------------------------------------
A good, easy vege lasagna
Ingredients: lasagna noodles(I use 9 for a 9x13 pan), 1/2 cup grated zucchini(I tend to use more than this), one or two jars of spaghetti sauce(depends on how "saucy" you like yours), one small can mushrooms, dried oregano, dried parsley, 1 container Ricotta cheese(15 oz size/can substitute cottage cheese), 1 10 oz package frozen chopped spinach(thawed and drained well - dry it as much as possible),1/2 cup grated parmesan cheese, mozzarella cheese(I use the kind already shredded in bag - I think 2 cups)
Boil your lasagna noodles. In one medium mixing bowl, mix together grated zucchini, spaghetti sauce, and one Tbsp oregano. In another mixing bowl(probably a bit larger than the sauce one), mix together ricotta cheese, parmesan, 2 Tbsp parsley, and spinach.
In the bottom of the pan, put a small amount of sauce mixture and spread it all around the pan. Then place the first layer of noodles. Then do a layer of the sauce mixture(I don't measure so I don't know how much - I guess about 1/3 of the mixture), a layer of the cheese mixture(you will need a fork to get it to spread out well), a layer of mushrooms and mozzarella. Repeat. I always end with a layers of noodles, sauce, and some extra mozzarella and parmesan cheese.
Bake at 375 for 50 minutes covered with foil(or until bubbly and cooked through). Take the foil off and bake another 10 minutes until cheese is browned. Enjoy!!

Skillet Tomato Mac-n-Cheese by TERRI4HIM ------------------------------------------------------------------------ 1 3/4 cups hunts chunky tomato sauce 1 can Healthy request cream of mushroom soup 1 TBSP dried onion flakes 1/2 cup sliced mushrooms 1 1/2 cups shredded kraft reduced fat cheddar cheese 2 tsp dried parsley flakes 1/4 tsp black pepper 3 cups hot cooked elbow macaroni, rinsed and drained
IN a large skillet, combine tomato sauce, maushroom soup, onion flakes and mushrooms. Stir in Chedar Ceese, parley flakes and black pepper. Cook over medium heat, stirring often, until cheese melts. Add macaroni. Mix well to combine. Lower heat. Cover and simmer 10 minutes, stirring occasionally.
MY husband LOVESSSS this one!!
HINT -- 2 cups uncooked macaroni usually cooks to about 3 cups.
Serves 6- 1 cup servings 4 WW points All ing in cans are standard sizes that you'll find in the store.

My Mexican Rice by frangrantroses My Mexican Rice recipe ------------------------------------------------------------------------ I made this in a rice cooker. So I used the rice cooker cup for measuring.
4 cups white rice 5 cups water 1 package (Taco Bell) taco seasoning
Cook until rice is tender (whether or not in your rice cooker or not) The rice will absorb the seasoning.
Add 1 can chili beans - drained 1 can diced tomatos (or Rotel if you prefer)
Garnish with fat free sour cream. Next time I plan to add mushrooms, green peppers, fat free cheddar cheese. But even "naked" it was tasty. Gives 4 servings.

Cheap lasagna by April Danette
-------------------------------------------------------------------------------- Noodles Sauce Cheese
Noodles:
2C. flour 4 large eggs
mix together well. I have a large stand mixer with a dough hook, if you don't have one you'll have to do this by hand. Do NOT use a handheld mixer, you'll tear it up. You'll get a very sticky dough. Flour your kitchen table and drop the dough on, dust a little four on the dough and flour your rolling pin. Roll out dough, dustin with flour when needed. You'll get to a point where the douh just wants to spring back, but is still too thick to be used as noodles. When you get to that point, stop and let the dough rest for about 10 min. then you will be able to roll out the dough the rest of the way. Your dough shough be pretty thin, as it thickens a bit in the oven.Cut into large noodles with a pizza wheel. Anything will work, I just like the pizza wheel.
pan: lightly grease
sauce:
1/2 of a large jar of spaghetti sauce and 1 small can of condense tomato soup. ( You could use the full jar of spaghetti sauce, I just was trying to stretch my groceries) + 2 lbs. of ground fried sausage. Farmland sausage is only $.97/lb
Layer the lasagne, first a light layer of sauce then the noodles. Just keep layering the sauce and noodles until you've got a lasagne. I was grocery poor that week and only had sliced cheese and used it in one of the middle layers and it was fine, but most would rather have more cheese in the layers, just stick them in. Fill the pan with hot water, just over the top layer and then cover with foil. Bake at 375 for about 35-40 min.
I know those noodles make it seem dauntling, but it took longer for me to type this out than it did to make the lasagne. My grand total for this came up to something like $4.78

Spaghetti Pie by 4littlelambs -------------------------------------------------------------------------------- 6 oz box of spaghetti (I use macaroni or rotini usually) 1/3 cup Parmesan cheese 1 cup cottage cheese 2 tablespoons butter (I sometimes use a little more) 2 well beaten eggs
Cook pasta as directed and drain! Mix with all other ingredients and put into pie plate (I usually spray with pam prior)!
1/2 cup onion 1/4 cup green pepper 1 pound hamburg (I sometimes use bulk sausage) 8 ounce can tomatos 6 ounce can tomato paste 1 teaspoon sugar 1 teaspoon oregano 1/2 teaspoon garlic powder 1/2 cup mozzarella cheese (or whatever I have on hand)
Saute meat, onions & pepper! Add all other ingredients and simmer for a bit! Place mixture on top of spaghetti with edges showing (like pie crust)! Cook at 350 degrees for 20 minutes then add cheese to top and cook til melted!
I have also just opened a jar of sauce for this!! I usually have homemade sauce in the freezer that I just pull out and use! The kids love it and it's incredibly easy!

Pasta Bake by Carlislehomemom
-1 16oz package of noodles, any shape of noodles is fine, just not spaghetti noodles, use penne, rottoni, egg noodles, what have you -one can of diced tomatoes (try to buy a can that has oregano or basil or some italian seasonings in the can) -one can of tomato sauce -1.5 cups of shredded mozzarella cheese -oregano or your favorite italian seasonings, and some garlic -if you want also brown .5 lb of ground beef or italian sausage
cook noodles and drain
combine cooked noodles, diced tomatoes, sauce, cheese, and seasonings (add meat if you want) in a casserole or pyrex baking dish..top with more mozzarella cheese.
Bake at 350 for 15 minutes or until cheese is completely melted

you'll need: -one box of mac n cheese, prepare it -one rope sausage (like the ones by hillshaire farm, I use the turkey kilebasa) -bag of frozen mixed veggies, or fresh plate of baby carrots with celery and ranch to dip or whatever veggie you want
-make the box of mac and cheese -while you wait for the water to boil and the noodles to cook, cut the sausage into one inch sections, toss them into a saute pan that you sprayed with cooking oil, grill for a few minutes on each side, then pour 2 tablespoons of pancake or maple syrup over the sausage and reduce heat to simmer for a few minutes -once the mac and cheese is ready the sausage will be ready, don't forget to add your veggies.
takes me about 15 minutes to make this meal..we call it a "college meal" because we ate it all the time in college, but it still rotates into my meal plan once a month

Stuffed Manicotti with Four Cheese & Sausage (from Creamette box) - by StillJulie
8 oz manicotti, uncooked 1# Italian sausage 1/2 cup chopped onion 2 cloves garlic, chopped 28 oz can diced tomatoes 6 oz can tomato paste 1 tsp dried basil leaves 1 tsp sugar 1/2 tsp salt 1/4 tsp pepper 16 oz container ricotta cheese 8 oz shredded mozzarella cheese 4 oz shredded provolone cheese 1/3 cup grated parmesan cheese 1 egg
Cook manicotti as package directs. Drain.
Brown sausage. Drain off fat. Add onion and garlic; cook til tender. Stir in tomatoes, paste, and seasonings. Bring to a boil; reduce heat, simmer 15 minutes.
Combine and mix cheeses (hold back 1 cup mozzarella for topping) and egg in a medium bowl. Stuff manicotti with cheese mixture.
Spread half the sauce on the bottom of a greased 9x13 pan. Arrange manicotti over sauce. Spoon remaining sauce over the top. Cover. Bake 35 minutes at 350 degrees. Top with remaining 1 cup mozzarella cheese. Bake 5 more minutes, uncovered.

Conscous stuffing w/currants, apricots & pistachios by DDofEve Ingredients 2 Tbsp butter 1 small onion, minced 2 medium garlic cloves, minced 1/4 tsp ground cinnamon 1/8 tsp ground ginger 1/8 tsp turmeric 1 cup plain couscous 1-1/3 cups homemade chicken broth or low-sodium canned broth 1/4 cup finely chopped dried apricots 3 Tbsp dried currants 1/4 cup shelled pistachio nuts, chopped 2 Tbsp minced fresh parsley leaves Salt Ground black pepper Instructions Heat butter over medium heat in a medium saucepan. Add onion, garlic, cinnamon, ginger and turmeric, and saute until onion softens, 3 to 4 minutes. Add couscous; stir until well coated with spices and butter, 1 to 2 minutes. Add chicken broth, bring to a simmer, remove from heat, cover and let stand until couscous has absorbed all water, about 5 minutes. Fluff couscous with a fork, then stir in dried fruit, nuts and parsley. Season to taste with salt and pepper. To reheat stuffing, place in a microwave-safe bowl, cover with plastic wrap and heat in microwave on high power until very hot, 2 to 4 minutes. (Alternatively, place in a saucepan, add 1 to 2 tablespoons water and reheat on stovetop.) Spoon hot stuffing into Cornish hens. Note: Toasted slivered almonds can be substituted for the pistachio nutspistachio nuts. Parmesan Oven Rice by Linderlou Serves 4
1 tablespoon olive oil 2/3 cup long-grain rice 1 and 2/3 cups chicken broth 1/4 cup grated Parmesan cheese 2 tablespoons snipped fresh parsley (or 2 teaspoons dried parsley) 1/2 teaspoon salt Dash of pepper
In a medium skillet, heat olive oil over medium-low heat; add rice.
Cook and stir until rice is coated and light golden brown.
Remove from heat.
Stir in chicken broth, cheese, parsley, salt and pepper.
Turn mixture into a one-quart casserole. Bake, covered, in 350°F oven for 50 minutes; stir after 30 minutes.
This recipe is easily doubled for when company's coming.

Green Rice by Linderlou
2 tablespoons fresh celery leaves 1 tablespoon margarine 1½ cups chicken broth ¾ teaspoon salt 1/8 teaspoon pepper ¾ cup long-grain rice 10-ounce bag fresh spinach, well rinsed and drained ¼ teaspoon nutmeg ¼ cup snipped chives, or 1 tablespoon dried 2 tablespoons chopped, fresh parsley or 2 teaspoons dried ¼ cup toasted pine nuts
Preheat oven to 350°. Combine first five ingredients and bring to a boil in a 2-quart flame-proof serving dish. Stir in rice. Remove from heat; cover tightly and bake in preheated oven for about 50-60 minutes.
While rice is baking, chop washed and drained spinach. Cook in pan with small amount of water until spinach is wilted. Combine the last 4 ingredients with the wilted spinach. Combine spinach mixture with the baked rice, stirring gently to blend.

Fried Rice by Linderlou 8 slices bacon 1/2 cup chopped onion 1/2 cup chopped green pepper 1 clove garlic 1 cup grated carrot 1 cup cooked rice 2 eggs 1 cup chopped, cooked meat (chicken, beef, pork)
Fry bacon in 10-inch skillet until crisp. Drain and crumble, reserving drippings. Sauté onion, green pepper and garlic in reserved drippings until tender-crisp. Stir in carrots. Cook for 1 minute or until tender-crips. Add rice; mix well. Break eggs into mixture; stir until mixed. Cook until eggs set, stirring frequently. Stir in bacon and chopped meat.
