Farmhouse Barbeque Muffins (not breakfast, but dinner) (by BCatherine)
I made this one for the first time tonight and it was very good. My husband likes pretty much everything I cook and I could tell that even he raved more about this one. Make sure to grease the muffin tin first (I just used cooking spray).
1 pkg. regrigerated buttermilk biscuits (I used regular rather than the ones that are layered).
1 pound ground beef
1/2 cup ketchup
3 tablespoons brown sugar
1 Tablespoon cider vinegar
1/2 teaspoon chili powder
1 cup shredded cheddar cheese (I just shredded 8 oz. and used about 6 of it probably).
Press biscuits into greased muffin pan. In skillet brown beef. Add all other ingredients except cheese together. Add to cooked meat. Add meat mixture to biscuit cups. Top with cheese. Bake 375. Bake 20 min. Very yummy and easy.

We had this for dinner tonight and it was pretty good.
1 lb. ground beef
1 can refried beans
Shredded cheddar cheese (as much as you like)
cream cheese
1 pkg. taco seasoning
soft tortilla shells
salsa
Cook meat and taco mix then drain (I cooked the meat first and then added the seasoning b/c I always rinse my meat after cooking and didn't want to rinse off the seasoning). Mix meat together w/ beans and cheese (I used about 6 oz. of cheese in this part). Spread cream cheese on tortilla and put meat mixture in the middle and roll up. (I didn't do the traditional burrito type roll - I just rolled them sideways - I think that it would keep the filling in better and also it fit in the dish better that way). Put in a casserole dish and sprinkle w/ cheese (I used about 3-4 oz. this time). Cover w/ a jar of salsa and bake at 375 for about 10 min. or until cheese melts. Serve w/ sour cream.

My macaroni goulash (by SandKsmama)
Here's how I do it: 1 box macaroni(a regular size mac n cheese or equivalent plain elbow noodles), boiled till done 1 can corn(or equivalent frozen), drained 1 can diced tomatoes, undrained 1/2 -1 lb hamburger, browned American cheese(or velveeta) to taste(if I've used a mac n cheese, then I use the packet that comes with that, and add a couple slices of American cheese as well).
Basically, I boil the noodles, drain them, put them back in the pot and add all other ingredients, stirring and heating till the cheese is melted. This is "comfort" food for our family:-) Not very exciting, but everyone likes it!

Love this one. So easy.
1lb. hamburger (uncooked) 1 can French Style green beans 1 1/2 c. Shredded mozzarella cheese 1 can cream of mushroom soup 1 bag of tater tots
Layer in casserole dish or pan in order given. Bake at 1 1/2 hours at 350.

Love this one too.
1 lb. ground beef 1/2 tsp. salt 1 tsp. mild green chopped chilies 1 can refried beans 1 can mild enchilada sauce 1 c. cottage cheese 1 c. shredded cheddar cheese Fritos
Brown beef and drain grease; set aside. Add salt, refried beans, enchilada sauce, green chilies, cottage cheese, and 1/2 cheddar cheese. Bring to a boil and stir until cheese melts. Alternate layers of meat, cheese mixture, and Fritos in a greased 2 quart baking dish. Bake at 350 for 20 minutes. Remove and sprinkle remaining 1/2 cheddar cheese on top. Bake for an additional 10 minutes until cheese melts.

Beef Goulash
1½ pounds boneless beef chuck steak, cut into 3/4-inch cubes* 2 tablespoons all-purpose flour 1 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon garlic powder 1 can (8 ounces) tomato sauce 1 medium onion, chopped 1/2 cup water 1 tablespoon sugar 1 tablespoon paprika 2 tablespoons vinegar 2 tablespoons Worcestershire sauce 1 bay leaf
Shake beef, flour, salt, pepper and garlic in plastic bag until beef is coated. Mix beef and remaining ingredients in 2-quart casserole. Microwave, covered, at HIGH (100%) 5 minutes. Reduce power to MEDIUM (50%). Microwave until beef is tender and sauce is thickened, 50 minutes to 1 hour, stirring once or twice during cooking. Let stand 5 to 10 minutes. Serve over noodles, if desired.
*If using ground beef: Cook ground beef and onions together until ground beef is browned; drain. Mix ground beef, flour, salt, pepper and garlic and other ingredients in 2-quart casserole. Cook until sauce is thickened.

Easy Baked Bean Casserole (by takemetoMaui)
large can Baked Beans 1/2 lb. ground beef or turkey 1/2 onion, chopped 1/2 lb. bacon
Brown ground beef and onion. Meanwhile, cook bacon in microwave (place raw bacon on paper plate and 2 paper towels, cover with one paper towel - cook on hi for 3+ minutes until crisp). Crumble bacon and to hamburger, along with beans. Place in casserole dish and bake at 350 until hot.
*double this recipe for potlucks - you will bring the pan home empty!!

10 small new potatoes, halved not peeled (you may use the larger potatoes and just cut into chunks) 12 small white onions, peeled (you may use regular size onions and just cut into chunks) 30 baby carrots (1/2 pound) 1 red or green bell pepper, seeded and cut into 1 " pieces (optional) 1 1/2 lbs beef stew meat, cut into 1 to 1 1/2 " cubes 2 cups beef broth or bouillon 2 teaspoons fresh oregano leaves, chopped (you may use dried) 1/4 teaspoon Paprika 1 tablespoon fresh parsley, chopped (you may use dried) 1 tablespoon Worcestershire sauce 1/2 teaspoon salt 1/8 teaspoon salt 3 tablespoons cornstarch 3 tablespoons cold water
Place potatoes, onions, and baby carrots in slow cooker. Add bell pepper and beef. In small bowl combine broth, oregano, paprika, parsley, Worcestershire sauce, salt, and pepper. Pour over meat and vegetables. Cover and cook on low 9-10 hours. Turn pot to high. In small bowl dissolve cornstarch in water; stir into cooked stew mixture. Cover and cook on high for 15 to 20 minutes or until thickened.
Stove top version (I did it this way yesterday and liked it just as well):
I dredged the stew meat in flour and browned in a dutch oven in some hot oil. I added the onions and cooked a bit. Then I added the carrots and the broth with the seasonings. I simmered for several hours on low. Since I dredged the meat in flour I did not need to use the cornstarch at the end. It was just the right thickness already.
This is VERY yummy and good served with biscuits or homemade bread and a salad.

1 # ground beef, browned 6 medium potatoes, peeled and cubed 1 16 oz bag of baby carrots ( I didn't have these on hand so I just cut up some carrots.) 3 cups water 1 packet of dry onion soup mix 1 garlic clove, minced 1 1/2 tsp Italian seasoning 1 1/2 tsp salt 1/2 tsp. garlic powder 1/4 tsp. pepper 1 can tomato soup ( I used an extra can of tomatoe paste) 6 oz can of tomato paste
1. Combine all ingredients except tomatoe soup and paste in slow cooker. 2. Cover and cook on high 3 1/2 to 4 hours on high. 3. Stir in soup and paste. 4. Cover and cook on high 1 hour more.
To add more color and vegetables to the stew, 1 1/2 cups frozen peas can be added in step 3.
8-10 servings

Mom's Enchildadas by kimmer89
No amounts here; when I make this it is with a package of ground beef about 1.5-2 lbs. Makes a 13x9 dish or two smaller baking dishes full.
Brown ground beef; add taco seasoning per directions. Chopped onions Large pack of shredded cheese - I use cheddar/jack
Have the above ready and then heat corn tortilla in hot oil for a few seconds each side. Drain on towel. Fill with beef, onion and cheese and roll. Place in baking dish. Repeat until dish is filled - leave some beef remaining for gravy. Top enchiladas with extra cheese. Bake at 350 til hot and cheese is melted.
Gravy/sauce - leave some beef in the pan. Add water, more taco seasoning (not a whole package!!), chili powder, and other spices (I usually use a dash of cinnamon too). Heat to a boil. Should be a rich brown color. Make a paste of flour and water - add to gravy but not too much! Gravy should be a little bit runny.
Once enchiladas come out of oven, serve with gravy on top.
Side note: gravy can be placed on the enchiladas before baking, but I find this makes my tortillas mushy.

Lasagna by lmf33 Lasagna
1lb. lasagna noodles 24oz mozzarella cheese 1 can of Parmesan cheese 1 15oz ricotta cheese 1 3lb jar of spaghetti sauce, your preference Half lb of pizza pepperoni.
Cook lasagna noodles for 10 min, drain, rinse with cold water. Brown hamburg, chop and drain grease. Add spaghetti sauce. In 9" x 13" bake pan layer noodles, sauce mixture, pepperoni, ricotta cheese, mozzarella cheese, and sprinkle Parmesan. Repeat 2 more times. Bake at 350 for 1hr.

Plain old Italian Meat-a-balls-a (very moist not dry!) (by ddofEve)
Meatballs
2 slices of white sandwich bread (crusts discarded), torn into small cubes 1/2 cup buttermilk or 6 tablespoons plain yogurt thinned with 2 tablespoons sweet milk 3/4 pound ground chuck or 1 pound if omitting ground pork 1/4 pound ground pork mixed with ground chuck 1/4 cup grated Parmesan cheese 2 tablespoons minced fresh parsley leaves 1 large egg yolk 1 small clove of garlic , minced (1 teaspoon) 3/4 teaspoon table salt ground black pepper vegetable oil for pan-frying (about 1 1/4 cups
1. For the meatballs: Combine bread and buttermilk in small bowl, mashing occasionally with fork, until smooth paste forms, about 10 minutes.
2. Mix all meatball ingredients, including bread mixture and pepper to taste in medium bowl. Lightly form 3 tablespoons of mixture into 1 1/2-inch round meatballs; repeat with remaining mixture to form approximately 14 meatballs. (Compacting them can make the meatballs dense and hard. Can be placed on large plate, covered loosely with plastic wrap, and refrigerated for several hours.)
3. Heat 1/4 -inch vegetable oil over medium-high heat in 10- or 11-inch sauté pan. When edge of meatball dipped in oil sizzles, add meatballs in single layer. Fry, turning several times, until nicely browned on all sides, about 10 minutes, regulating heat as needed to keep oil sizzling but not smoking. Transfer browned meatballs to paper towel--lined plate; set aside. Repeat, if necessary, with remaining meatballs.
Enjoy however you like! I make a ton of these at one time, and freeze in ziplock baggie for whenever. Make 'em extra big for Meatball subs. Dh's love this! Top with spaghetti sauce, and provolone cheese and put under broiler to melt cheese.

3-4c sliced potatoes 2 Tbsp marg 1/2 tsp salt 1lb ground beef 10oz corn 1 can cream of mushroom soup 1/3c milk 1/4tsp garlic powder onion pepper shredded cheddar cheese
Toss potatoes with butter and salt. Arrange in bottom of greased 8x12 pan. Bake at 400 for 25-30min. Meanwhile, brown ground beef. Cover potatoes with beef and corn. Combine remaining ingredients and pour on top. Cover with cheese. Bake 20-30min.

Meal in a Pan. (Easy) (by Coxmama)
1c uncooked minute rice 1lb lean ground beef, browned 1 small onion, chopped 1 green bell pepper, finely chopped 1 can undrained corn (or green beans.) 1 can (28oz) Tomatoes 1/2lb grated cheddar cheese
Brown beef and onion in a frying pan. Drain. In large casserole dish layer: uncooked rice, beef, onion, gr.pepper, corn (or gr.beans) then tomatoes. Sprinkle cheddar cheese on top. Cover and bake at 350 for 30-40min.
***You can substitute a large can of your favorite spaghetti sauce for the tomatoes if you wish.***

Chesse 'N Tater Beef Casserole (by Mom2riandkayl)
1 lb potatoes, shredded (rinse and pat dry) (or use thawed, frozen hash browns) 1 lb ground beef ½ cup chopped onion 1 tsp salt or seasoning salt ¼ tsp pepper 1 can whole kernel corn, drained (or 2 cups frozen) 1 can tomato soup (10 oz can) 1 cup shredded cheddar or American cheese
Preheat oven to 350º. Brown ground beef and onion; drain. Stir in salt, pepper, corn and soup. Pour mixture into a 2 qt casserole dish. Mix together potatoes and cheese. Spoon over meat mixture. Bake 30 - 40 minutes or until lightly browned.
