Rocky Road by Ohiomom
Rocky Road
1 12 oz.bag chocolate chips 1- 14 oz. can eagle brand milk 1- 10 1/2 oz. bag mini marshmallows 2 c. roasted, unsalted peanuts 2 Tbsp. butter or margarine
Over low heat, or in a double boiler, melt chocolate chips and butter. When melted add eagle brand milk. Remove from heat. In large mixing bowl mix peanuts and marshmallows. Add chocolate mixture and stir. Press into 9 x 13 pan, lined with waxed paper. chill. __________________

Mocha Logs
1 cup butter, softened 3/4 c. sugar 1 egg 1 tsp vanilla 2 1/4 c. all purpose flour 2 tbsp instant coffee crystals 1/2 tsp baking powder semisweet chocolate, melted finely chopped pecans
Cream butter and sugar; beat in egg and vanilla. Stir together flour, coffee, baking powder and 1/2 tsp salt; slowly blend into butter mixture. *Using star plate, force through cookie press in 3 inch strips on ungreased cookie sheet. Bake at 375 for 10-12 minutes. Cool. Dip one end of each cookie in chocolate, then coat with nuts.
*Note* If you haven't got a cookie press, you can just roll them.

chocolate dipped maple logs or crescents
as the case may be. This recipe is the first in my quest to find the perfect maple chocolate chip cookie.
1 c. butter softened 1 c. powdered sugar 2 egg yolks 2 1/2 c. all purpose flour 1 1/2 tsp maple extract chocolate chips (1 cup for dipping, plus extra for cookies)
Preheat oven to 375. Cream butter, sugar and egg yolks in large bowl. Beat in flour and maple extract until well mixed. Shape dough into 1 inch balls. Place about 4-5 chocolate chips into each ball (sorry, this is my addition and I couldn't figure out how much to add!)Roll balls into 2 inch ropes, tapering on each end. You may form them into a crescent shape, if you wish. Place 2 inches apart on ungreased cookie sheets. Bake 8-10 minutes or until set but not browned. Remove to wire racks to cool. Melt chocolate chips in top of double boiler over hot, not boiling water. Dip one end of each crescent in melted chocolate. Place onwaxed paper; cool until chocolate is set.
The Verdict:Pretty good, but not exactly what I'm looking for. I'm going to try mini chocolate chips next time and regular sugar instead of powdered! __________________

Dirty Snow... simple but OHHHH so good!!!
1 stick butter 1 box raisins, optional 1 pkg. chocolate chips 1 can nuts, optional 2 c. peanut butter (16 oz. Jar) 1 to 1 ½ pkgs. powdered sugar 1 box Golden Grahams cereal
Combine butter, chocolate chips and peanut butter in pan and melt. Combine cereal, nuts and raisins. Pour liquid over cereal mixture and mix well. (Make sure everything is coated well.) Place into paper bag or large zip lock and add powder sugar. Shake like crazy until everything is separated and well coated. __________________

Buckeyes (Peanut Butter Balls) ------------------------------------------------------------------------ I wasn't sure what category to put this under. This goodie is something my family makes at Christmas time. Is there a category for Christmas goodies? Or can we start one? Thanks Julie!!!!!
1 stick margarine 1 lb. powdered sugar 1 1/2 cups peanut butter 6 oz. chocolate chips 1/4 paraffin wax
Mix margarine, powdered sugar and peanut butter until mealy. Roll into small balls. Melt choc. chips and wax in double boiler and keep over low heat. Dip each peanut butter ball into the choc. mixture. Place on parchment paper and refrigerate until chocolate has hardened.
These are also great to make ahead and keep in the freezer. Of course, I end up eating them straight from the freezer and have to make another batch before Christmas.

Addition by JeanieP My recipe was different ------------------------------------------------------------------------ When I got this recipe from a friend, it listed one more ingredient: several children to make balls.
Then at the end, it said, "Get rid of last ingredient before all buckeyes are gone."
We love these, and when we lived in Ohio, we found out they look just like buckeyes, which is where they got their name from. __________________

4 layer cookie bar like a twix candy bar by monkeymommy
4 LAYER COOKIE BAR
1/3 box Keebler Club crackers 2/3 c. sugar 1/2 c. brown sugar 1 stick butter 1 c. crushed graham crackers 1/4 c. milk 2/3 c. peanut butter 1/2 c. chocolate chips 1/2 c. peanut butter chips
Lightly butter 9 x 13 inch pan. Place one layer of whole Club crackers in pan. Melt butter in microwave, add white sugar, brown sugar, graham crackers, and milk. Cook 5 minutes in microwave on high, stirring 2- 3 times. Pour over layer of crackers and spread. Add another layer of crackers. Combine peanut butter, chocolate chips, and peanut butter chips. Melt in microwave about 2 minutes on high. When melted, stir and pour over crackers. Sprinkle with nuts if desired. May also use butterscotch chips instead of peanut butter chips. Cool before cutting into bars. Taste like TWIX® candy bars.

White Chocolate Peppermint Fudge by MaeinTX
White Chocolate Peppermint Fudge
1-1/2 sticks butter/margarine 3 cups sugar 2/3 cup (5-oz can) PLUS 1 TBSP evaporated milk 1 (12-oz) pkg White Chocolate chips (I like Nestle Premium White Chocolate chips) 1 (7-oz) jar marshmallow crème 1/2 tsp vanilla (optional) strong peppermint oil- I used a lot, probably 1/2 tsp or so, but the recipe called for few drops to strength desired. I bought Kroger's brand. Be careful inhaling as you stir it in- it was eye watering.
Butter a 9x13 baking dish. Mix butter, sugar, and milk in a heavy, 3-quart pot; bring to a full rolling boil on MEDIUM heat, stirring constantly. Continue boiling four minutes on MEDIUM heat, or until candy thermometer reaches 234F, stirring constantly. Remove from heat; gradually stir in chips until melted. Add marshmallow crème and vanilla and peppermint oil.
Pour half (for tw-toned) or three-fourths (for swirled) of the funde in a baking dish- and then add red food coloring (I used Wilton icing coloring) to the reserved fudge, then either swirl the red into the white fudge or pour on top to make it two-toned.
I noticed on the Kraft Marshmallow crème this year that their recipe does not call for the extra Tbsp of canned milk. I add it anyway. I think that may be what keeps the fudge nice and creamy instead of crumbly. I think their older recipe called for the extra evaporated milk. I also prefer to line my baking dish with parchment or wax paper instead of buttering the dish. I chill it overnight and then plop it out upside down and cut it up.
I used a small circle cutter and cut the "mint fudge" and then wrapped each piece in parchment paper for giving. Everyone called and said it was yummy and wanted the recipe. __________________

These are so yummy that I have a hard time not eating them all instead of including them in Christmas goodie packages.
Cranberry-Orange Pinwheels
1 cup cranberry 1 cup pecans ¼ cup packed brown sugar 1 cup butter, softened 1½ cups granulated sugar ½ teaspoon baking powder ½ teaspoon salt 2 eggs 2 teaspoons finely shredded orange peel 3 cups all-purpose flour
In a blender container or food processor bowl combine cranberries, pecans and brown sugar. Cover and blend or process until cranberries and nuts are finely chopped; set aside.
In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, baking powder, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in as much of the flour as you can. Stir in any remaining flour with a wooden spoon. Divide dough in half. Cover and chill dough about 1 hour or until easy to handle.
Roll half of the dough between pieces of waxed paper into a 10-inch square. Spread half of the filling over dough square to within 1/2 inch of the edges; roll up dough. Moisten edges; pinch to seal. Wrap in plastic wrap. Chill for 4 to 24 hours. Repeat with remaining dough and filling.
Preheat oven to 375°F. Cut rolls into ¼-inch slices. Place slices 2 inches apart on an ungreased cookie sheet. Bake in preheated oven for 8 to 10 minutes or until edges are firm and bottoms are light brown. Cool on cookie sheet for 1 minute. Transfer to a wire rack and let cool. Makes about 5 dozen cookies.

Cherry Chocolate Blossoms by Coxmama
Cherry Chocolate Blossoms
1c powdered sugar 1c butter, soft 2tsp maraschino cherry liquid 1/2tsp almond extract (or mint...) 3-4 drops red food colour 2 1/2 cups flour 1/2tsp salt 1/2c maraschino cherries, drained and chopped 48 chocolate "rosebuds"
Heat oven to 350. In a large bowl mix sugar, butter, cherry liquid, extract and food colour. Blend well. Spoon flour into measuring cup. Add flour and salt to 1st mixture stir in cherries and blend well. Roll into 1 inch balls. Place 2" apart on ungreased cookie sheets. Bake at 350 fo 10-12min. Immediately op each cookie with a candy, press down firmly. Remove from cookie sheet. __________________

Heat oven to 350. In a large bowl combine short, marg, and sugar; beat until light and fluffy. Add vanilla and eggs; beat until smooth. Spoon flour into measuring cup. Add flour, cocoa, baking powder and salt. Blend well. Stir in m&m's. Drop dough by tspfulls 2" apart onto ungreased cookie sheets. Yields 5 1/2 dozen cookies.

Peanut butter mice.
Make up your favourite peanut butter cookie dough. Roll into 1" balls. Use a mini m&m for the nose 2 mini choc chips for eyes 1 peanut split in 2 for the ears and thin licorice for the tail

Cheerio wreaths
2c cheerios 1c green candy melts (or wafers) red cinnamon hearts
Line cookie sheet with foil. Place cereal in a large bowl. Melt candy melts as directed. Pour melted candy over cereal, toss to mix. For each wreath, drop about 3 TBs mix onto cookie sheet. With fingers shape into wreath with a 1" opening in the middle. Decorate with cinnamon hearts. Very cute. __________________

Iced Lemon Cookies by Coxmama
Iced lemon cookies
Cookies:
1/2c butter, soft 1/2c sugar 1/2c powdered sugar 1 egg 1/2c oil 1 tsp grated lemon peel 2 1/4 c flour 1/2 tsp baking soda 1/2 tsp cream of tartar 1/4tsp salt 3 tbsp sugar
Topping:
2c powdered sugar 3-4 tbsp fresh lemon juice 3/4c chopped, shelled pistachio nuts
In a large bowl. Combine butter, 1/2c sugar and 1/2c powder sugar. Beat well. Add egg, oil and lemon peel. Mix well.
Add flour, baking soda, cream of tartar and salt to sugar mixture; beat until well blended. Cover and refrigerate for 2hrs for easier handling. Heat oven to 325. Shape dough into 1" balls. Place 2" apart on ungreased okie sheets. Flatten cookies with bottom of glass dipped in sugar. Bake for 9-11 minutes. Cool for 2 minutes. Remove from cookie sheets, place on wire racks. Cool completely.
In a separate bowl, blend 2c powdered sugar and enough lemon juice for spreading. Spread onto cooled cookies and top with pistachios before frosting sets. __________________

4 c Cheerios 4 c Rice Chex 2 c Red and Green M&M's 2 c Pretzels, crumbled or mini pretzels 1 pk almond bark Peanuts--optional (I think it would be good)
Mix all dry ingredients. Melt almond bark or white chocolate (apx 20 oz I think...1pk). Pour over dry mix and stir well.
Spread on wax paper lined cookie sheet to cool. Break into pieces and EAT IT ! Yummmm. __________________
